We have been on such a lovely run of budget friendly date nights at home lately and it has lifted our spirits so much during this stage of our debt free journey. Sometimes it is the quiet, simple evenings that make the biggest impact.

A walk through our neighbourhood, the crisp smell in the air, and leaves falling like little orange and gold confetti can turn an ordinary afternoon into something really peaceful.

This cocktail was one of those spur of the moment creations that felt perfect for that exact moment of the season.

You know that tiny window between Halloween and Thanksgiving where Fall feels extra cosy and quiet and the trees are somehow at their prettiest.

We had been out walking through the neighbourhood after a long week and both of us were in the mood for something seasonal and a bit indulgent but still friendly on the grocery budget.

We popped into our local commissary and spotted Hood’s Pumpkin Eggnog sitting on the seasonal shelf. It was on sale for less than a dollar and we grabbed it immediately. Seasonal, cheap, cheerful, and perfect for what we had in mind.

Back home my husband suggested mixing it with Irish cream and oh my goodness this combination turned into the most decadent grown up fall eggnog. Sweet, smooth, rich, and full of that cosy pumpkin spice warmth.

To keep things affordable we use the Costco Irish cream here in the States. Imported Baileys is gorgeous but it can be pricey and we are very much a baby step 2 family.

The Costco version tastes lovely in mixed drinks like this and keeps everything right on budget. Truthfully this whole cocktail came in at well under a dollar a glass which made us smile almost as much as the taste did.

We spent the rest of the evening watching what my American husband calls a Thanksgiving classic. It’s The Great Pumpkin, Charlie Brown. I had never seen it before moving here but it was such a sweet and wholesome little moment for us.

Warm drink, cosy living room, fall candle burning, and a seasonal cartoon on the TV. A simple date night but one we both really enjoyed.

This Irish Pumpkin Nog is creamy, smooth, perfectly spiced, and tastes like autumn in a glass. It could not be easier either.   • 2 oz Irish cream (we use the affordable Costco version when sticking to a tighter budget)
  • 1 & 1/2 cups Hood’s Pumpkin Eggnog
  • Ice
  • Ready whip for topping (squirty cream for those in the UK)
  • 1/4 tsp pumpkin pie spice to sprinkle

Step one: Fill your glass with ice.

I cannot find pumpkin eggnog. What should I do?

Mix regular non alcoholic eggnog with:

  • 1 tbsp pumpkin puree
  • 1 tsp pumpkin pie spice

Stir until smooth, then use in place of the pumpkin eggnog.

Too thick? Add a splash more eggnog.

Not pumpkin enough? Add another pinch of spice on top.


Storage

  • This cocktail is best enjoyed fresh.
  • You can however pre mix the pumpkin nog portion if you can’t get hold of Hood’s Pumpkin Eggnog and refrigerate for up to two days. Give it a good stir before pouring.
