Sadly, there’s no Chili’s anywhere near our current base, so it had been a long time since he’d had his favorite dish.

So I decided to recreate it at home. It took a few test runs to get the sauce creamy enough and the spice blend balanced just right, but this version is pretty spot-on. And if anything, even better than takeout. It’s full of flavor, quick to make, and much kinder on the wallet!

Since we’re working our way through baby step 2 of our debt-free journey, meals like this are perfect. We still get that restaurant-style treat, but it fits right into our grocery budget.

We love cooking this one for at-home date nights when the kids are in bed and the base finally feels quiet.

I’ll boil up a batch of my homemade fresh egg garlic fettuccine pasta noodles while the sauce simmers, and by the time the chicken’s done, dinner’s ready in less than 30 minutes. Cozy, rich, and full of flavor, it’s everything we love in one bowl!

  • 8 oz block cream cheese, softened and cubed
  • 1 pint heavy cream

Prepare your chicken breasts by trimming off any fatty or stringy bits, and tenderize them.

Add in your cream cheese cubes and whisk until loosened and smoother.

Drop in the cubed cream cheese and whisk slowly as it softens. It will look lumpy at first and that’s okay! Keep whisking for about 5 minutes until it turns creamy and smooth.

Then whisk in your cream and shredded cheese until they all melt together to form a smooth and creamy sauce.
