Perfect Comfort Food for Football Days and Easy Game Day Gatherings!
College football days in our house always come with one non negotiable rule. There has to be something warm, cheesy, and easy to scoop sitting on the counter before kickoff.
Hi! If youโve been following me for long youโll already know this, but for those who are new, welcome to Far From The Farm. Iโm Mona, the Brit behind the recipes, learning life and food in the States while sharing our debt-free journey and whatโs on the menu in our home today!
My husband is a huge college football fan, and game days for him are about comfort food just as much as the game itself. He loves dips that stay warm, feel indulgent, and do not require hovering in the kitchen while everyone else is settled in front of the TV.
Pinterest loves to convince people that game day food has to be complicated or themed within an inch of its life. In reality, some of the best football food is the simplest stuff that everyone actually eats. This spicy green chiles and sausage queso is exactly that kind of recipe.

It is bold, creamy, a little spicy, and incredibly low effort. Just a few pantry ingredients, one small slow cooker, and barely any prep. It is the kind of dip that disappears faster than expected and has people going back for one more scoop without even thinking about it.
This version adds fire roasted green chiles and hot sausage to classic salsa con queso. The result is richer, heartier, and more satisfying than plain queso alone. It feels substantial enough to stand on its own as part of a game day spread without needing anything fancy alongside it.
I make this in my favorite little 1.5 quart slow cooker, which is the perfect size for a small football gathering. It comfortably feeds four to six people, stays warm for hours, and does not take up much counter space at all.
As always, these photos are from my real kitchen here in our sweet military base home. No staged lighting or spotless marble counters. Just real life and real food made in a small space. Proof that you can feed your family well without needing a dream kitchen or fancy tools!
So letโs roll up our sleeves and head into the kitchen to make this spicy green chili sausage queso dip that has become a football day staple in our house!

Ingredients
Ingredients (Serves 4 to 6)
- 1 x 4 oz can of fire roasted green chiles, undrained
- 2 x 15 oz jars of salsa con queso
- 1/2 lb hot sausage, cooked and drained
Step-by-Step Instructions
Step 1ย โ Brown the hot sausage in a pan over low – medium heat, slowly for about 20 minutes, breaking it up as it cooks. You want to avoid having too much hard browned pieces as they don’t mix well and affect the overall texture of the dip.
Once fully cooked, drain the sausage well using a strainer. Blot lightly with kitchen roll to remove excess grease.

Step 2ย โ Add the fire roasted green chiles directly into the slow cooker.

Step 3ย โ Then add both jars of salsa con queso. Use a spoon or spatula to scrape every bit from the jars!
Step 4ย โ Stir in the 1/2 lb of cooked and drained hot sausage until evenly combined.

Step 5ย โ Cover and heat on low for 2 to 3 hours, or high for about 1 hour if you are short on time.

Serve straight from the slow cooker and keep it on low or ‘warm’ during the game so it stays warm and scoopable.

Notes and Troubleshooting
Notes
- Fire roasted green chiles add warmth and depth without overwhelming heat
- Hot sausage gives the dip body and richness, but mild sausage works if preferred

Storage
- Freezing is not recommended as the texture changes once thawed
- Store leftovers in an airtight container in the refrigerator for up to 2 days
- Reheat gently in the microwave, stirring every 30 seconds until smooth
Serving Suggestions
