Biscuits and country style sausage gravy are one American classic I have come to truly appreciate.
Back in the UK we grow up with entirely different breakfast traditions, so I never had anything like this until moving to the States.
Now it has become one of my favourite cosy comfort meals. It is hearty, filling, simple, and incredibly budget friendly which makes it a perfect breakfast or a quick weeknight dinner.
This gravy pairs beautifully with my Southern Buttermilk Biscuits, but it works just as well poured over store bought biscuits when time is tight. Sausage brings so much flavour on its own that we do not add extra salt and pepper.

The seasoning from the meat and chicken bouillon gives all the savoury warmth you need, but of course you can adjust to your own taste if you prefer.

This Instant Pot sausage gravy is quick, rich, creamy, and full of flavour. The Instant Pot takes away the need for standing over the stove and watching constantly.
You brown the sausage, pressure cook it briefly to deepen the flavour, add the milk and flour, and in just minutes you have a thick, silky gravy.

Serves 4 to 6
- 1 & 1/2 lbs ground breakfast sausage
- 1 tsp chicken bouillon powder
- 3/4 cup water
- 3 cups milk
- 1/2 cup all purpose flour

Freezer Meal Prep
This recipe cannot be assembled as a traditional freezer meal, but here is a quick tip: keep cooked sausage frozen in small bags.
If you do that, you can jump straight to step two when making gravy which saves time on busy mornings!
Step by Step Instructions

Step 1: Turn your Instant Pot to saute mode. Add the ground sausage and cook until golden brown and cooked through. Switch saute mode off.

Step 2: Add the bouillon powder and water. Use your wooden spoon or grinder tool to scrape up all the browned bits from the bottom. This step adds so much flavour.
Step 3: Place the lid on and set to HIGH pressure for 5 minutes. Finish with a QUICK release.

Step 4: While it cooks, whisk together the milk and flour in a bowl until no lumps remain.
Step 5: When the pressure has released, remove the lid and switch back to saute mode.
Step 6: Slowly pour in the milk and flour mixture while whisking.

Step 7: Allow the gravy to simmer for 3 to 5 minutes until thickened. Stir occasionally to keep it smooth. Switch off the heat when it reaches your preferred consistency.
Step 8: Ladle over warm biscuits for a hearty breakfast or dinner.

Gravy too thin? Keep simmering for another couple minutes.
Gravy too thick? Add a splash of milk and whisk well.
Instant Pot shows a burn warning? this almost always means a bit of sausage stuck to the bottom. Switch off, scrape well with a wooden spoon, then continue.

- Store leftovers in an airtight container in the fridge for up to three days. Reheat gently on the stove or in the microwave with a splash of milk to loosen it.
- Can be frozen for up to one month but texture may change slightly.
