The machine handles the intense mixing, kneading, and temperature-controlled first rise. This keeps your counters clean, eliminates the guesswork, and guarantees a perfectly soft, fluffy bun every single time!

  • Measuring jug

Ingredients

Makes 24 mini filled brioche rolls

For the dough

  • 1 cup warm water
  • 1/4 cup sweetened condensed milk
  • 3 tbsp sugar
  • 2 1/4 tsp active dry yeast
  • 1 tbsp ube powder (or sub with purple sweet potato powder)
  • 3 eggs
  • 4 tbsp salted butter, cold and cubed
  • 4 cups all purpose flour
  • 1 tsp salt

For the filling

  • 15 oz jar Jif Peanut Butter and Chocolate Flavor Spread


Step-By-Step Instructions

Step One: Activate the yeast

Add the warm water, sweetened condensed milk, sugar and yeast to the your bread machine’s insert pan. Give everything a stir then cover for 5-10 minutes.

Remove the pan insert from your bread machine. Add the warm water, sweetened condensed milk, sugar, and yeast into the bread machine pan. Give everything a quick stir, then cover the pan with plastic wrap or a clean kitchen towel. Leave it for 5 to 10 minutes so the yeast can proof.

Step Two: Check the yeast for activity

after 5 – 10 minutes the yeast mixture should have activated and be frothy and bubbly in appearance, like the bottom image here.

After 5 to 10 minutes, the mixture should look bubbly and frothy on top. That is how you know the yeast is alive and ready to go! If nothing happens, throw it away and start again with fresh yeast. It is annoying, but much better than wasting the eggs, butter, flour, and time on dough that will not rise properly.

Step Three: Add the ube, eggs, and butter

Add in the ube powder (or purple sweet potato powder), eggs and butter.

Add the ube powder, eggs, and cold cubed salted butter directly into the bread machine pan. No need to stir or mix by hand. The bread machine will handle all the heavy mixing for you once the dough cycle starts.

Step Four: Add the flour

Then add the flour on top, no need to mix anything the bread machine takes care of that!

Add the all-purpose flour directly on top of the wet ingredients. Again, there is absolutely no need to mix it in yourself at this stage.

Step Five: Add the Salt (The Baker’s Secret)

If you’re still getting flat, poorly risen bread from your bread machine, why not try adding the salt last and covering it with flour like I do here? It works for me! Make a small hole in the top of the flour, add the salt in and cover it over.

Make a small hole in the top of the flour and add the salt into that little well, covering it with a bit of the surrounding flour. This helps stop the salt from coming into direct contact with the yeast too early in the mixing process.

In my experience, early contact can affect the rise, even if some bread machine manuals do not make a big fuss about it. Sometimes experience knows different!

Step Six: Run the bread machine dough cycle

Place the bread machine pan back into your machine. Select the Dough Cycle and press start. This usually takes about 1 hour and 30 minutes (or 90 minutes), depending on your specific machine.

About 10 minutes into the bread machine dough cycle running, lift the lid briefly to check your dough, and make sure it’s not too dry. This is a brioche dough so you’ll want it to look on the wetter side (see above).

Here’s a quick guide to checking the dough balls that might help and talks you through how to adjust when your dough doesn’t look right!

When the dough cycle is fully complete, your brioche dough should be soft, rich, and beautifully purple.

Step Seven: Divide the purple dough

When the dough cycle has finished, tip the purple dough out onto a very lightly floured surface. Separate it into 24 equal-ish pieces. No need to stress over perfection, it is not The Great British Bake Off after all! You just want them similar enough so that they bake evenly in the oven.

Step Eight: Roll each piece

Take one piece of dough at a time and roll it out lightly on your floured surface. You want it thin enough to wrap around the sweet center, but not so thin that it tears. Aim for a small, flattened circle or oval shape.

Step Nine: Add the chocolate peanut butter filling

Add 2 teaspoons of Jif Peanut Butter and Chocolate Flavor Spread to the center of each piece of dough. Try your best not to overfill them! I know it is tempting, but too much filling makes the seams harder to seal and can cause messy leaking during baking.

Step Ten: Seal the sweet rolls

Pull the edges of the dough up and over the filling. Pinch the seams tightly together so the chocolate peanut butter is fully enclosed. Turn the roll seam-side down and gently smooth it into a little bun shape. Place each filled roll seam-side down on a parchment-lined baking sheet. (This is the same sealing method as my other filled brioche rolls—bring the sides up, pinch, and tuck!).

Step Eleven: Second rise

Cover the shaped rolls with plastic wrap or a clean kitchen towel. Let them rest for about 1 hour, or until they look puffy and have roughly doubled in size. They should look soft and full before they go anywhere near the oven.

Step Twelve: Bake until fluffy

Preheat your oven to 375°F (190°C). Bake the rolls for 15 minutes. I do not use an egg wash on these because the ube dough already has such a gorgeous color, and egg wash can look a little odd on purple rolls. You want the tops baked through and lightly golden, with that vibrant purple color still showing beautifully around the sides.

Step Thirteen: Cool and wrap for storage

Remove the rolls from the oven and let them cool completely on a wire cooling rack. Do not bite into one straight away! The chocolate peanut butter filling gets incredibly hot and can easily burn you. Once they are fully cooled, wrap each roll individually in plastic wrap if you want them ready for quick snacks or sweet breakfast bites later.


Notes

  • Ube powder can vary in color and strength, so your rolls may be lighter or darker purple depending on the brand.
  • Do not add too much extra flour when shaping. A little is fine, but too much can make the rolls heavier.
  • The filling will be hot when the rolls first come out of the oven.
  • These are best slightly warm, especially if you like the middle soft and gooey.
  • No egg wash is needed for this recipe.
  • If your bread machine is smaller, watch the dough the first time you make this. Brioche dough can rise dramatically.


Troubleshooting

Dough did not rise.

Your yeast may have been old, or the liquid may have been too hot or too cold.

Dough feels sticky.

Brioche dough is naturally soft. Use a little flour on your hands and surface, but do not overload it.

Filling leaked out too much.

A little leaking is normal, but if there’s a lot the rolls may have been overfilled, or the seams may not have been pinched tightly enough.

Rolls look pale.

Ube dough can bake lighter than regular brioche on top. Check that they are cooked through rather than relying only on color.

Rolls are dense.

They may have needed longer on the second rise, or the yeast may not have activated properly at the start.

  • Store cooled rolls in an airtight container at room temperature for up to 2 days.
  • For longer storage, wrap each cooled roll individually in plastic wrap and place them in a large container or zip top freezer bag.
