I am lucky enough to have four truly lovely sisters-in-law. One in the UK and three here in the States. And one of my US sisters-in-law absolutely loves all things pistachio.
So naturally, when the Dubai chocolate craze started taking over everywhere, I immediately thought of her.
Pistachio cream. Chocolate. Rich fillings. Pretty little treats that feel like they came from a bakery instead of your own kitchen.
But some Dubai chocolate inspired treats have that shredded, stringy, crispy texture inside that people either love or absolutely do not. Our family is not always wild about that part. So I went a slightly different direction.
Instead of trying to copy the exact viral chocolate bar, I took the flavors that make it so popular and tucked them inside soft, mini brioche style rolls.

Nutella brings that rich chocolate hazelnut flavor. Turkish pistachio cream brings the sweet, nutty pistachio center. Together they give you that Dubai chocolate inspired feel, but softer, warmer, and a little more bakery-style.
And oh my goodness, these are fun!
They are soft and fluffy on the outside, rich and creamy in the middle, and just small enough that they feel like the perfect little treat with coffee, tea, or after dinner.
This recipe is based on my bread machine brioche dough that I already use for my large Nutella filled sweet brioche rolls and bread machine brioche hamburger buns. Same reliable dough idea, but divided smaller into 24 mini rolls instead of 12 large ones.
That makes them perfect for bigger families, parties, church events, brunch tables, birthdays, or those times you want to show up with something that feels special without spending bakery prices.
And of course I just have to mention again, that using a bread machine has genuinely changed the way I cook at home, and I think it could help you out too!

Why You’ll Love Using a Bread Machine In Your Kitchen!
If you’re new here, you’ll quickly learn that I am such a fan of using a bread machine for dough. It has been one of the biggest helps in my kitchen, especially during busy or overwhelming seasons.
My parents gifted me this little Compact Cuisinart Bread Machine recently when I moved from the UK to the States after getting married, and it has worked like a little powerhouse ever since!

It kneads beautifully. It rises dough evenly. It keeps everything contained in one pan so I am not dealing with flour across every surface of the kitchen.
And on days where the house feels chaotic or I am juggling too much, I can add the ingredients, press the dough button, and let it get on with the work while I focus on everything else.
It takes away so much of the guesswork and makes homemade bread, pizza dough, cinnamon rolls, soft rolls, and sweet bakes feel much simpler.
It has also been a real blessing for our budget. Homemade dough costs pennies compared to store prepared versions and certainly compared to eating out. As a military family on baby step 2 of our debt free journey, little savings like that matter across an entire month.

Ingredients
Makes 24 mini filled brioche rolls
For the dough
- 1 cup warm water
- 1/4 cup sweetened condensed milk
- 3 tbsp sugar
- 2 1/4 tsp bread machine yeast
- 3 eggs
- 4 tbsp salted butter, cold and cubed
- 4 cups all purpose flour
- 1 tsp salt
For the filling
- 1/2 cup Nutella chocolate hazelnut spread (approx 24 tsp)
- 1/2 cup Turkish pistachio cream (approx 24 tsp)

For the egg wash
- 1 egg
- 2 to 3 tbsp water
Step-by-Step Instructions
Step One: Activate the yeast

Remove the pan insert from your bread machine.
Mix the warm water and condensed milk together, then pour into the bread machine pan.
Add the sugar and yeast and give it a quick stir.
Cover and leave for 5 to 10 minutes until the top looks frothy and bubbly.

Quick Tip!
This step gives you a quick check that your yeast is alive before you add the eggs, butter, and flour. If nothing happens after 10 minutes, start again with fresh yeast.
It is much better to find out now than after you have added the rest of the ingredients.
Step Two: Add the rest of the dough ingredients

Add the eggs and cold cubed butter directly into the yeast mixture.

Add the flour on top, no need to mix.
Make a small well in the flour and add the salt, then lightly cover it with a little flour. This helps stop the salt from sitting directly in the yeast mixture too early.
Step Three: Run the dough cycle

Place the pan back into the bread machine.
Select the dough cycle and press start.
This usually takes around 1 hour 30 minutes depending on your machine.
Be warned, this recipe makes a lot of dough. In my compact bread machine it rises right up toward the top, so do not panic if it looks dramatic in there (see my picture below). That rich brioche dough is doing exactly what it should!

When the dough cycle is finished, tip the dough out onto a lightly floured surface.
Step Four: Divide the dough
Divide the dough into 24 equal pieces.
You do not need to use a scale unless you want them perfectly even. I usually just divide the dough in half, then keep dividing until I have 24 smaller pieces.
Step Five: Roll each piece
Take one piece of dough and roll it out lightly on a floured surface.
You want it thin enough to wrap around the filling, but not so thin that it tears.
Aim for a small flattened circle or oval.

Step Six: Add the Nutella and pistachio cream
Add 1 tsp Nutella and 1 tsp Turkish pistachio cream to the center of each piece of dough.
Try not to overfill them. I know it is tempting, but too much filling makes the seams harder to seal and can cause leaking during baking.
The combination of chocolate hazelnut and pistachio cream is rich, sweet, nutty, and so good inside the soft brioche.

Step Seven: Seal the rolls
Pull the edges of the dough up and over the filling.
Pinch the seams tightly together underneath so the filling is fully enclosed.
Turn the roll seam side down and gently cup it with your hand to smooth the shape.
This step matters. A good seal helps keep that lovely filling inside instead of bubbling out onto the tray.
Step Eight: Second rise

Place the filled rolls seam side down onto a parchment lined baking sheet.
Leave a little space between each one so they have room to puff.
Cover with plastic wrap or a clean kitchen towel and let rise for about 1 hour, until they look puffy and noticeably larger.
Step Nine: Add egg wash

Make the egg wash by beating together 1 egg with 2 to 3 tbsp water.
Brush the tops lightly.
You do not need loads. Just a light coating gives the rolls that pretty golden bakery-style finish.
Step Ten: Bake
Bake in a preheated 375°F oven for 15 minutes, until golden on top and cooked through.
The bake time stays about the same even though these are smaller, because the enriched dough still needs time to bake properly around the filling.
Keep an eye on them toward the end. You want golden, soft rolls, not overly dark ones.

Step Eleven: Cool and serve
Transfer the baked rolls to a cooling rack.
Let them cool for at least 15 minutes before serving because the filling inside will be piping hot and gooey when it comes out of the oven.
If you want the tops to stay extra soft, cover them loosely with a clean towel while they cool.
These are lovely slightly warm while the filling is still soft, but they are just as good cooled and packed up for later.

Note on dough size!
This is a rich brioche dough and it rises a lot during the dough cycle. In my compact Cuisinart bread machine it almost reaches the top of the pan and that is totally normal.
If your machine is on the smaller side or you prefer handling less dough, just make half the recipe and run the dough cycle as usual.
Troubleshooting
- Filling leaking out? The seams may not have been sealed tightly enough, or the rolls may have been overfilled.
- Dough too sticky? Lightly flour your hands and work surface, but avoid adding too much flour or the rolls can become heavier.
- Dense rolls? Your yeast may not have activated properly or the rolls may have needed longer on the second rise.
- Tops getting too dark? Check a few minutes earlier next time or move the tray slightly lower in the oven.
- Filling too hot when serving? Let the rolls cool for a few more minutes before eating.

- Store cooled rolls in an airtight container at room temperature for up to 2 days.
- For longer storage, wrap individually in plastic wrap and place into a freezer bag.
- Freeze for up to 2 months.
