Since moving to the States I’ve fallen in love with French Toast. It’s rich, sweet, and feels like dessert for breakfast.

But every now and then, I crave something simpler and savoury like this good old-fashioned British Eggy Bread! Today was one of those days, so I grabbed some day-old bread and decided to share this easy, frugal recipe that tastes like home.

Now, we’ve all heard the jokes about British food being plain or “like we’re still in the war,” lol. But there’s truth in it!

The British government literally ran campaigns encouraging a meat-free meal once a week, and most working-class families grew up eating beans on toast, jacket potatoes, egg and chips, and yes – eggy bread. It’s comfort food that fills you up without costing much at all.

These days, while living stateside, I’ve leaned right back into those old-school habits. On our debt-free journey, I’ve even started saving bacon grease instead of throwing it out. It adds flavour and makes this eggy bread taste so good you’ll never miss the butter.

  • 1 tbsp bacon grease
  • 2 large slices of bread, cut in half
  • 2–3 eggs (depending on size)
  • ¼ tsp salt
  • ⅛ tsp black pepper


Step-by-Step Instructions

Step 1: Prepare your bread and pan

Start by slicing your bread in half.

Day-old bread works best here because it holds its structure when soaked in the egg mixture.

If you’re using fresh bread, just leave it uncovered on the counter for 10–15 minutes while you prep the rest of the ingredients, it’ll firm up slightly and handle the mixture better.

Add a tablespoon of bacon grease to your skillet and set it over medium heat. You want it hot enough to sizzle gently when the bread hits the pan, but not so hot that it burns before the inside cooks through.

Whisk together your eggs, salt and pepper.

Step 2: Make your egg mixture

Crack your eggs into a shallow bowl or dish that’s wide enough to dip the bread in later.

Add your salt and pepper, then whisk everything together with a fork or small whisk until the yolks and whites are fully combined and slightly frothy.

This is where you can make it your own. if you want extra flavour, try adding a dash of smoked paprika, a sprinkle of garlic salt, or even a tiny drop of Worcestershire sauce.

Step 3: Dip the bread

Take your bread halves and gently dip them into the egg mixture one at a time.

Turn them over a couple of times so they soak evenly, but don’t let them sit too long or they’ll fall apart. You want them fully coated but not soggy.

If you’re using thicker slices it’ll soak up just the right amount and cook beautifully golden on the outside while staying soft in the middle.

Once the bacon grease is shimmering and ready, carefully lay your soaked bread into the skillet. You should hear a light sizzle, that’s how you know the pan is the right temperature.

Fry for 4 to 5 minutes on each side, adjusting your heat if needed so it browns evenly without burning. The edges should turn crisp and golden while the center firms up as the egg cooks through.
