  • Dough hook attachment
  • Measuring cups and spoons
  • Silicone spatula
  • Large 2 to 2 1/2 tbsp cookie scoop
  • Large baking sheet
  • Parchment paper
  • Cooling rack
  • Small bowl
  • Spoon
  • Mug or sturdy drinking glass for shaping the cookies
  • Wire whisk or fork for mixing the glaze


Ingredients

Makes 16 to 18 cookies

Cookie Dough

  • 1 (13.25 oz) lemon cake mix (I use Betty Crocker Super Moist Lemon Cake Mix)
  • 1 cup all purpose flour
  • 2 eggs
  • 1/2 cup vegetable oil
  • 2 tsp vanilla extract
  • 1 tsp lemon extract
  • 1 cup white chocolate chips

Easy Lemon Glaze (Optional)

  • 4 tbsp powdered sugar
  • 1/4 tsp vanilla extract
  • 2 tsp lemon juice, bottled or fresh


How to Make Easy Lemon White Chocolate Chip Cookies

Step 1: Mix the Dough

Add the box cake mix and flour to the bowl of your KitchenAid stand mixer, or similar mixer.

Add the lemon cake mix, flour, eggs, vegetable oil, vanilla extract, and lemon extract straight into the bowl of your stand mixer.

Add the eggs and oil.

Then add in the vanilla and lemon extracts.

Fit the dough hook and mix on the lowest speed for about 2 minutes.

The dough will look quite thick, and that’s exactly what you’re aiming for. Stop the mixer and scrape down the sides and bottom of the bowl with a silicone spatula so everything is evenly combined.

Step 2: Mix in Half the Chocolate Chips

Mix with the dough hook for 2 mins, scrape down the bowl and add in half of your white chocolate chips, before mixing again.

Add about half of the white chocolate chips to the dough.

Mix for another 2 minutes on the lowest speed until the chocolate chips are evenly distributed.

You’ll notice the dough becoming smoother as it comes together.

Step 3: Add the Remaining Chocolate Chips

Scrape down the bowl again, add the rest of the white choc chips and mix for another minute until everything is incorporated.

Scrape down the bowl once more.

Add the remaining white chocolate chips and mix for about 1 minute, just until they’re incorporated throughout the dough.

Try not to overmix at this stage. You simply want the chocolate chips spread evenly through the mixture.

Step 4: Finish Mixing by Hand

Remove the bowl from the mixer and use your hands to gently work through the dough.

This only takes a minute but helps make sure there aren’t any pockets of dry flour hiding underneath and that every cookie gets a generous amount of white chocolate chips.

Step 5: Scoop and Bake

Using a large cookie scoop this recipe makes about 16-18 cookie dough balls.

Line your baking sheets with parchment paper.

Using a large 2 to 2 1/2 tablespoon cookie scoop, portion the dough into evenly sized balls, leaving plenty of space between each cookie. These bake up thick rather than spreading into thin cookies, but they still need room for a little expansion.

Bake in a 350°F oven for 10 to 11 minutes.

Bake for 10-11 minutes until edges starting to turn lightly golden, then shape with a large coffee mug whilst fresh out of the oven and still warm.

The cookies are ready when the edges are just beginning to turn lightly golden while the centers still look soft. Don’t wait until the tops become golden brown or they’ll lose that lovely soft texture.

Step 6: Shape for Bakery-Style Cookies

As soon as the cookies come out of the oven, while they’re still soft, use the mug technique to shape them.

Carefully use the flat base of a large mug to gently press each cookie down. Aim for roughly 1/4 to 1/2-inch thickness.

When fresh out of the oven carefully shape the cookies by flattening each one with the bottom of a large mug, like this.

Be careful not to squash them aggressively. You just want to encourage them into that thick bakery-style shape.

Next, place the open end of the mug over the cookie so the cookie sits inside the rim. Keeping the mug flat against the baking sheet, make a few small circular motions around the cookie.

This gently pulls the edges inward and creates that neat round bakery-style cookie shape.

Then create the bakery-style round shape by circling each of the lemon cookies a few times with the open end of the same large mug whist the cookies are still warm.

It only takes a few seconds per cookie, but it makes such a difference to the finished look!

Then leave the shaped cookies to cool on the baking tray, on top of a cooling rack.

Leave the cookies on the baking tray, sitting on top of a cooling rack, until they’re completely cool. They’ll continue to set as they cool, so resist the temptation to move them too early.

Step 7: Add the Optional Lemon Glaze

Add powdered sugar, vanilla and lemon juice to a small bowl.

If you’d like an extra pop of lemon flavor, stir together the powdered sugar, vanilla extract, and lemon juice in a small bowl until smooth.

The glaze should be thin enough to drizzle rather than spread. If needed, add another tiny splash of lemon juice to loosen it.

Stir everything together until fully mixed, and drizzle sparingly over your cookies.

Using a spoon, lightly drizzle the glaze over the cooled cookies.

You don’t need much. A light drizzle adds another layer of bright lemon flavor without overpowering the white chocolate.

Allow the glaze to set before storing or serving.

How to freeze the cookie dough balls

To freeze the cookie dough scoop out the balls of dough and place them on a parchment lined baking sheet, flash freeze for 1-2 hours and then place them in a freezer bag or container.

This cookie dough freezes really well. Simply scoop the dough onto a parchment-lined baking tray just as if you were going to bake them.

Place the tray in the freezer for 1 to 2 hours to flash freeze them, making sure the dough balls are completely firm. Transfer the frozen cookie dough balls to a freezer-safe zip-top bag or airtight container, label with the date, and freeze.

To bake from frozen just remove however many cookie dough balls you want to cook, space out like this on a parchment lined cookie sheet, and bake for 13-15 mins in a 350°F preheated oven, then shape with a large coffee mug and top with optional lemon drizzle glaze.

When you’re ready for fresh cookies, there’s no need to thaw them first. Bake in a 350°F oven for 13 to 15 minutes, until the edges are just beginning to turn lightly golden.

Shape them with the mug while they’re still warm if you’d like that bakery-style finish, then glaze once completely cooled if using the optional lemon drizzle.
