It fills the house with warmth, it tastes a thousand times better than store-bought, and it gives you a little boost of pride every time you put those golden buns on the table.
While I love a good sourdough loaf, there’s a soft spot in my kitchen for quicker breads too.
This brioche-style sesame bun recipe is the one I keep coming back to. It’s light, buttery, fluffy, and just the right touch of sweet.

And the best part? It pairs with almost anything.

Ingredients (Makes 8–10 Buns)
- 1 cup warm milk (microwaved 35 seconds)
- 2 & ¼ teaspoons active dry yeast (1 packet)
- 2 tablespoons honey
- 1 egg
- 2 tablespoons melted butter
- 3 cups all-purpose flour
- 1 teaspoon salt
- Oil, for coating the dough
Egg Wash: 1 egg & 1 tablespoon water, whisked together
Optional topping: 2 to 3 tablespoons sesame seeds
Step-by-Step Instructions
Step 1: Activate the yeast
Pour warm milk into the bowl of your KitchenAid mixer. Add honey and yeast. Stir and cover for 5 minutes until bubbly and fragrant.
Step 2: Mix the dough
Add egg and whisk lightly. Then add flour, melted butter, and salt in that order so the warm butter doesn’t scramble the egg. Attach the dough hook and mix on low speed for 5 minutes.

Step 3: First rise
Turn dough out onto the counter. Do not add extra flour, as that will toughen the buns. Knead briefly into a smooth ball. Coat lightly with oil and transfer to a clean, lightly oiled bowl. Cover with plastic wrap and let rest for 1 hour.

Step 4: Shape
Punch down the dough to release large air pockets. Form back into a ball, then divide evenly into 8 to 10 smaller pieces. Pinch and tuck to create smooth tops. Place onto a parchment-lined tray, flatten slightly into disc shapes, and cover again.

Step 5: Second rise
Let dough rise for another hour until puffy.

Step 6: Egg wash and topping
Brush each bun with egg wash for that classic golden brioche look. Sprinkle sesame seeds if you’d like.

Step 7: Bake
Bake at 375°F for 12 to 15 minutes, until golden brown. Move buns to a cooling rack for 10 minutes before slicing.

Notes & Troubleshooting
Notes:
- Egg wash is optional but gives you that shiny golden finish.
- Honey can be swapped for sugar if that’s what you have.
Troubleshooting:
- Buns too dense? Make sure your yeast activated properly.
- Dough too sticky? Resist adding flour. Knead with oiled hands instead.
- Flat buns? They may have over-proofed on the second rise. Shorten rise time slightly next bake.
Storage
- Store cooled buns in an airtight container for up to 3 days.
- Freeze baked buns in a bag for up to 2 months. Thaw at room temperature or warm in the oven before serving.
