These quick and fluffy hot dog buns are one of those recipes that make you feel capable and calm in the kitchen, even on days when life feels anything but.

There is another reason I make these at home. Since moving from the UK to the US, I have had some unexpected issues with store-bought bread. It is not gluten related. We are still working through isolating which preservatives or additives do not agree with me.

Ingredients
Makes 16 hot dog buns
Hot Dog Buns
- 4 tsp active dry yeast
- 4 tbsp white sugar
- 1 cup milk
- 1 cup water
- 5 1/2 cups bread flour
- 1 tsp salt
- 2 large eggs
- 1/2 cup salted butter, softened (1 stick)
Egg Wash
- 1 large egg
- 2 tbsp water
Step by Step Instructions
Step 1
Add the milk and water to a measuring jug and microwave for about 45 seconds until just warm to the touch. It should not be hot. Pour this into the bowl of your stand mixer.
Step 2
Add the sugar and yeast to the warm liquid. Stir gently, then cover the bowl and let it sit for 5 to 10 minutes.

Step 3
After resting, the yeast mixture should look foamy and bubbly. If it does not, discard it and start again with fresh yeast.

Step 4
Add the flour, salt, eggs, and softened butter to the bowl.

Step 5
Using the dough hook on the lowest setting, knead the dough for 3 to 4 minutes until smooth and elastic. The dough will be very soft but should pull away from the sides of the bowl.
Do not be tempted to add extra flour or the buns will turn out dry.

Step 6
Shape the dough into a ball and return it to the bowl. Cover and let it rest for 30 minutes. This is a quick rise dough.
Step 7
Turn the dough out onto the counter. You usually do not need extra flour for this recipe, but a very light dusting is fine if needed. Divide the dough into 16 equal portions.

Step 8
Shape each portion into a 6-7 inch long hot dog bun shape and place on a parchment-lined baking sheet. I space mine about 1/2 inch apart so they bake into soft pull-apart buns. You can space them farther apart if you prefer individual buns.

Step 9
Cover the shaped buns and let them have their second rise, resting for 15 minutes.
Step 10
Preheat the oven to 350°F. In a small bowl, beat together the egg and water to make the egg wash.

Step 11
After 15 minutes, uncover the buns and brush each one gently with the egg wash.
Step 12
Bake for 12 to 15 minutes until lightly golden on top (the one’s shown here are baked for 15 minutes as we like ours a little more golden).

Step 13
Transfer the parchment paper and buns on to a cooling rack and allow to cool for at least 10 minutes before slicing. The buns will still be steaming inside and slicing too early can affect the crumb.
