
A Sweet and Smoky Chipotle Copycat for Easy, Cheap, Flavor-Packed Weeknight Dinners!
A Simple, Budget-Friendly Take on the Famous Chipotle Classic
I adore Chipotle. If I could only pick one Mexican-style place for the rest of time, it would be that one. Smoky chilies. Sweet heat. Fresh toppings. It all lands in that comfort zone every single time.
My favorite of all time was their limited edition Honey Chipotle Pulled Pork. Tender. Juicy. That perfect balance of sweet and savory with a little kick. Then it vanished from the menu. Life, right?
Eating out is a treat in our house, and honestly, we do not always have Chipotle money. Groceries cost more. Schedules get wild. The budget has to stretch.
So I made a copycat version that checks all the boxes. It is freezer meal friendly. It cooks quickly in the Instant Pot. It tastes close to the one I loved, without a long ingredients list or complicated steps.
The flavor is smoky and sweet, the texture is fall-apart tender, and the whole thing feels like a restaurant dinner that you pulled off on a Tuesday.

We serve it burrito style with rice, beans, and crisp lettuce. Sometimes as a salad bowl with avocado and lime.

Ingredients (Serves 4–6)
For the Freezer Meal
- 2 pounds boneless pork shoulder
- ¼ cup Cholula Chipotle Hot Sauce
- 2 tablespoons olive oil
- 5 tablespoons honey
- 1½ teaspoons onion powder
- 2 teaspoons garlic powder
- 2 teaspoons salt
- 2 teaspoons ground cumin
- ½ cup chicken broth or water

Freezer Meal Prep
Add all freezer meal ingredients to a labeled freezer bag. Press out the air, seal well, and flatten so it stores neatly.
Write the recipe name and cooking directions right on the bag so it is easy to grab on a busy night.
Freeze for up to 3 months.
Step-by-Step Instructions
Step 1. Pull out the prepared freezer meal

Take your freezer bag out when it’s time to cook. If it’s completely frozen solid, run the bag under cool water for about 20 to 30 minutes so it loosens up enough to slide easily into your Instant Pot.
Step 2. Load the Instant Pot
Place everything from the bag straight into your Instant Pot, including the pork, sauce, and all those good seasonings.
Add the extra ½ cup of chicken broth or water. Be careful not to rinse the seasoning off the pork as you pour, since that’s where all the flavor lives.

Step 3. Pressure cook
Seal the lid (make sure it is set to SEAL and not VENT) and set the pot to High Pressure for 60 minutes if your roast is around 2 pounds, or 80 minutes if it’s closer to 3 pounds.
Once the cooking time ends, allow it to release naturally for at least 20 minutes.
If you have extra time before dinner, leave it on Keep Warm for another hour or so. It helps the pork become even more tender and easy to shred.

Step 4. Shred the meat
If you’ve been around here for a while, you already know I always use my KitchenAid mixer to shred our meats because it does the hard work for me!

I take the pork straight from the Instant Pot, trim away any visible fat, then pop it into the mixer bowl and use the paddle attachment on low speed for one to two minutes until it’s shredded just right.
If you don’t have a mixer, two forks work just fine.
Once it’s shredded, I pour about two to four tablespoons of the cooking liquid back in to moisten it. Adjust this to however juicy your family likes it.
Step 5. Serve and enjoy

Spoon the pork into burrito bowls, tacos, or wraps, and drizzle a little of that honey chipotle sauce from the pot right over the top. It adds the perfect sweet heat to every bite.

Notes & Troubleshooting

- For milder heat, reduce the hot sauce to 2 tablespoons.
- Honey balances the heat and adds that signature glaze. Keep it in the mix.
- You can use pork loin, although it is leaner. If using loin, reduce cook time by about 10 to 15 minutes and add more liquid back after shredding.
Troubleshooting
- Too watery after cooking: simmer on Sauté for 5 to 10 minutes to reduce.
- Too spicy: stir in a tablespoon of honey or a splash of orange juice.
- Too dry: add more cooking liquid, a drizzle of olive oil, or a spoon of broth.
