So my husband and I raided the pantry, pulled out a can of pumpkin, a box of Dolly Parton’s Banana Cake Mix, and a few simple staples. We decided to throw them together, hoping for the best, and honestly it turned into one of the best little date nights we’ve had in ages!

We had such a laugh filming me put this ‘would it all work out?’ dessert together and waiting for it to bake, and when it came out bubbling and golden, it smelled like a hug in dessert form. Throw this dump cake together quickly with a few simple ingredients!

  • 1 (15.25 oz) box of Dolly Parton’s Banana Cake Mix
  • 1 (15 oz) can pumpkin puree
  • 1 (12 oz) can evaporated milk
  • 2 (4 oz) cups applesauce (8 oz total, unsweetened or whatever you have)
  • 1 to 2 tbsp ground cinnamon
  • 1 stick butter
  • ½ cup brown sugar
  • ½ cup chopped pecans (about a 2 oz bag)
  • 1 packet of Birds Instant Custard (optional, to serve)


Step-by-Step Instructions

Step 1: Preheat your oven to 350°F. Spray your 9×13 glass baking dish with non-stick spray and set it aside.

Mix the pumpkin, evaporated milk, cinnamon and applesauce together

Step 2: In a mixing bowl, combine the pumpkin puree, evaporated milk, applesauce, and cinnamon. Stir until smooth, then pour the mixture directly into your baking dish.

Step 3: Take your Dolly Parton Banana Cake Mix and sprinkle it evenly over the pumpkin layer. Do not mix – this is the true “dump” magic of the dump cake!

Step 4: Cut your stick of butter into thin slices and arrange them evenly over the top of the cake mix. This will melt down as it bakes and give the topping that golden, crisp texture.

Step 5: In a small bowl, stir together the brown sugar and chopped pecans. Sprinkle this mixture evenly over the top.

Step 6: Now the first time I made this I toasted the pecans a little too much so we reduced the time and now we bake in a preheated oven for 45 minutes, or until the top is bubbling, golden brown, and the edges start to pull away from the sides slightly.

Step 7: Remove from the oven and let it rest for at least ten minutes before serving. Serve warm and enjoy! I enjoy it with a taste of my UK home – a packet of British Bird’s Instant Custard!


Notes and Troubleshooting

Notes:

This recipe works beautifully with any Dolly Parton cake mix flavor, the Coconut and Yellow varieties are great too. The applesauce replaces the need for eggs or oil and keeps it extra moist, which makes it perfect for pantry cooking.

Troubleshooting:

If your topping browns faster than the filling cooks (see our video where the pecans are a little too toasted on some of our first cake), loosely cover with foil during the last ten minutes of baking. If it looks too wet when it comes out, give it a little time, it thickens as it cools, almost like a bread pudding.

  • Allow the cake to cool completely before storing. Cover the dish tightly with foil or transfer leftovers to an airtight container. It keeps well in the fridge for up to three days.
  • Reheat individual servings in the microwave for 20–30 seconds.
  • You can also freeze it for up to two months, just thaw overnight in the fridge before reheating.
