Ingredients

This recipe makes 1 very large batch of chocolate dough – Easily enough for 10 huge bakery-style fluffy dessert rolls. Try halving the recipe if you don’t need to make as many as I do or if your bread machine can’t hold as much dough!

Chocolate Dough

  • 1 1/3 cup warm milk
  • 1/3 cup white sugar
  • 3 teaspoons active dry yeast
  • 1 large egg
  • 1/2 cup salted butter, cold and cubed
  • 3 1/2 cups all purpose flour
  • 1/3 cup unsweetened cocoa powder
  • 1 teaspoon salt

Nutella Cheesecake Filling

  • 1 1/2 cups Nutella, softened
  • 8 oz cream cheese, softened

Optional Before Baking

  • 2 to 3 tablespoons heavy cream or half and half

Step by Step Instructions

Add the warm milk, sugar and yeast into the insert pan of your bread machine.

Step 1. Wake up the yeast

Pour the warm milk into your bread machine pan.

Add the sugar, then sprinkle the yeast over the top.

Give it a gentle stir, then cover the pan with a clean towel and let it sit for 5 to 10 minutes.

You are looking for a foamy, bubbly, slightly frothy top. If it stays flat, your yeast is not active and you will need to start again.

After 5 – 10 minutes the yeast mixture should look frothy and bubbly.

Step 2. Add the egg and butter

Add the egg to the yeast mixture.

Add the cold cubed butter.

Do not worry if the butter looks chunky at this stage. The dough cycle will work it in.

Then add in the egg, butter, cocoa and flour.

Step 3. Add the dry ingredients in the right order

Add the cocoa powder first.

Then add the flour on top of the cocoa.

Make a small well in the center of the flour and add the salt into that hole.

Cover the salt back up with a little flour. This keeps the salt from touching the yeast too early, which helps the rise.

Make a hole in the top of the flour and add in the salt, cover with some of the remaining flour. Then insert the pan back into the bread machine, select the ‘Dough’ cycle and press start.

Step 4. Run the dough cycle

Place the pan into your bread machine and select the Dough cycle.

Let it complete the full cycle, including kneading and the first rise.

When it is done, the dough should be soft, elastic, and slightly tacky. With cocoa dough, soft is what you want.

Step 5. Mix the filling

The filling comes together easily – just beat the Nutella and cream cheese with a paddle attachment, and set aside.

While the dough finishes, beat the softened cream cheese and softened Nutella together until smooth and fully combined.

Set aside.

Step 6. Roll, fill, and shape

When the dough cycle is finished roll out the dough on a lightly floured surface, into a large rectangle shape.

Lightly flour your counter.

Turn the dough out and roll it into a large rectangle, at least 25 x 16 inches in size (to give you enough for at least 2.5 inch thick rolls).

Spread the Nutella filling evenly over the dough, leaving a small border along one long edge so it seals well.

Spread the Nutella – cream cheese mixture over the top of the dough and leave a small border.

Roll up tightly from the long side into a log.

Slice into 2.5 – 3 inch pieces using a sharp knife or unflavored dental floss. This should give you 10 very large fluffy rolls when baked.

Roll up the filling-topped dough into a long log shape, then cut 2.5 – 3 inch pieces out with a knife or unfavored dental floss, and place on a parchment paper covered baking sheet. Place this in a freezer to flash freeze the rolls before transferring to a freezer bag to store.

Step 7. Flash freeze the rolls

Line a baking sheet with parchment paper.

Place the sliced rolls on the sheet with space between them.

Freeze until firm, about 2 hours.

Once solid, transfer to a labeled freezer bag and store for up to 2 months.

Allow the frozen rolls to thaw and rise before baking.

Option 1. Overnight Fridge Method

Place frozen rolls onto a parchment lined baking dish.

Cover loosely and refrigerate overnight.

The next morning, remove from the fridge and let rise at room temperature for about 1 hour until puffy.

Drizzle 2 to 3 tablespoons of heavy cream or half and half into the bottom of the pan if using.

Bake as directed below.

Option 2. Same Day Counter Rise

Place frozen rolls directly onto a parchment lined baking dish.

Cover loosely and allow to rise at room temperature for 4 to 5 hours until fully puffy.

Add the optional cream to the pan just before baking.

Bake as directed below.

Ingredients
  

Chocolate dough

Method
 

Make the dough
