Growing up between the UK and Germany, soft fresh bread and pastries were just part of everyday life. You could pop into a bakery and pick up warm brioche, chocolate filled rolls, or something sweet for breakfast without even thinking about it.
It was just normal to us. And it is one of those things I didn’t realise I would miss quite so much until I moved to the States.
Unless you live in a big city with a proper French bakery nearby, it is just not the same. And even when you do find something similar, it is often expensive or just not quite right.
So like a lot of things in our kitchen, I started making it at home. And honestly, it has become one of my favourite things to do.
This recipe actually came from tweaking my original chocolate chip brioche rolls recipe. Same base dough, same method, but this time I wanted something a bit more indulgent. Something that felt like a proper bakery treat.
So instead of folding chocolate through the dough, I stuffed each roll with a generous spoonful of Nutella.
And oh my goodness! Soft, rich brioche on the outside. Warm chocolate hazelnut filling in the middle. Proper bakery style.
These are the kind of rolls that disappear fast in our house.
My husband loves them. The family reaches for them constantly. And because this recipe makes a full batch of 12 good sized rolls, they are perfect for breakfasts, lunches, snacks, or even dessert.

If you’re new here, you’ll quickly learn that I am such a fan of using a bread machine for dough. It has been one of the biggest helps in my kitchen, especially during busy or overwhelming seasons.
My parents gifted me this little Compact Cuisinart Bread Machine recently when I moved from the UK to the States after getting married, and it has worked like a little powerhouse ever since!

It kneads beautifully. It rises dough evenly. It keeps everything contained in one pan so I am not dealing with flour across every surface of the kitchen.
And on days where the house feels chaotic or I am juggling too much, I can add the ingredients, press the dough button, and let it get on with the work while I focus on everything else.
It takes away so much of the guesswork and makes homemade bread, pizza dough, cinnamon rolls, soft rolls, and sweet bakes feel much simpler.
It has also been a real blessing for our budget. Homemade dough costs pennies compared to store prepared versions and certainly compared to eating out. As a military family on baby step 2 of our debt free journey, little savings like that matter across an entire month.

Ingredients
Makes 12 large brioche rolls
For the dough
- 1 cup warm water
- 1/4 cup canned sweetened condensed milk
- 3 tbsp sugar
- 2 1/4 tsp bread machine yeast
- 3 eggs
- 4 tbsp cold salted butter, cubed
- 4 cups all purpose flour
- 1 tsp salt
For the filling
- 12 tbsp Nutella chocolate hazelnut spread
For the egg wash
- 1 egg
- 2 – 3 tbsp water

Step-by-Step Instructions
Step One: Activate the yeast
Remove the pan insert from your bread machine.
Mix the warm water and condensed milk together, then pour into the bread machine pan.
Add the sugar and yeast and give it a quick stir.
Cover and leave for 5 to 10 minutes until frothy. If nothing happens, start again with fresh yeast.
Step Two: Add the rest of the dough ingredients
Add the eggs and cubed butter directly into the mixture.
Add the flour on top without mixing.
Make a small well in the flour and add the salt, then lightly cover it.
Step Three: Run the dough cycle
Place the pan back into the bread machine.
Select the dough cycle and press start. This usually takes around 1 hour 30 minutes.
Step Four: Shape and fill
Once the dough cycle is complete, tip the dough onto a lightly floured surface.
Divide into 12 equal pieces.
Roll each piece out to about 1/4 inch thickness.
Add about 1 tablespoon of Nutella to the center of each piece.
Pull the edges up and over the filling and pinch tightly to seal.
Step Five: Second rise
Place the filled dough balls seam side down onto a parchment lined baking sheet.
Cover and let rise for 1 hour until puffy.
Step Six: Bake
Make an egg wash by beating together an egg and 2-3 tbsp water. Brush the egg wash lightly across the tops of the rolls.
Then bake in a preheated 375°F oven for 15 minutes until golden.
Step Seven: Cool and serve
Transfer to a cooling rack straight away.
Let cool slightly or enjoy warm while the centers are still soft and gooey. Enjoy!

Note on dough size
This is a rich brioche dough and it rises a lot during the dough cycle. In my compact Cuisinart bread machine (as shown) it almost reaches the top of the pan and that is totally normal.
If your machine is on the smaller side or you prefer handling less dough, just make half the recipe and run the dough cycle as usual.
Troubleshooting
- Filling leaking out? Seams were not sealed tightly enough
- Dense rolls? Yeast may not have activated properly
- Too sticky? Lightly flour your hands when shaping
Storage
- Store in an airtight container for up to 3 days.
- Wrap individually in plastic wrap and place into a sandwich bag for easy grab and go snacks.
- These freeze very well. Freeze once cooled, then thaw at room temperature or warm gently in the microwave for a soft center again.
