This dish was inspired by my friend Samantha’s daughter, who often whips up batches of rich, buttery mushroom pasta for her family’s supper. It’s one of those recipes that feels indulgent but is made from everyday ingredients you probably already have in your kitchen.
The combination of butter, garlic, and mushrooms is simple but unforgettable. Everything comes together in one skillet, and it fills your kitchen with the kind of smell that makes everyone peek in to ask what’s cooking.
We use Johnny’s Garlic Spread Seasoning, which I’ll link in the ingredients below, because it adds a little magic without needing extra herbs .
You can use any mushrooms you like, but baby bellas are our top pick since they’re flavorful, pre-sliced, and budget-friendly.

If you really want to elevate this for a stay-at-home date night, try making your own fresh egg pasta from scratch using my Simple Fresh Egg Pasta Recipe.
It’s a fun way to cook together, and the fresh noodles soak up the buttery mushroom sauce beautifully.
As always, these photos are from my real kitchen here in our sweet military base home. No staged lighting or spotless marble counters. Just real life and real food made in a small space. Proof that you can feed your family well without needing a dream kitchen or fancy tools!

Equipment
- Non-stick skillet
- Knife
- Silicone spatula
- Measuring spoons
Available on Amazon.com [ad]
Ingredients (Serves 2)
- 8 oz sliced mushrooms (we love baby bellas best for this dish)
- 4 tbsp unsalted butter
- 2 tbsp garlic, minced
- ½ tbsp Johnny’s Garlic Spread Seasoning
- Salt and pepper to taste
Available on Amazon.com [ad]
Step-by-Step Instructions
Step 1: Start the base
In a large non-stick skillet, melt the butter over medium heat. Add the minced garlic and stir gently until fragrant, about 30 seconds to a minute. You don’t want it to brown, just to perfume the butter.

Step 2: Add the mushrooms
Toss in your sliced mushrooms and stir to coat them in the butter and garlic. Cook slowly on medium heat, giving the mushrooms time to release their moisture and soak up that buttery flavor. The goal is to let them soften and develop color without burning.
Step 3: Season and simmer
Sprinkle in the Johnny’s Garlic Spread Seasoning and stir again. This seasoning mix adds that perfect balance of savory salt, herbs, and a hint of warmth. Keep stirring occasionally as the mushrooms gently simmer.
Step 4: Add salt and pepper
Taste and season to your liking. I prefer to add a light pinch of salt and freshly ground black pepper, leaving room for everyone to season more on their plate.

Step 5: Toss with pasta
Once the mushrooms are tender and coated in buttery garlic sauce, add your cooked pasta straight into the skillet. Toss it through until every noodle is coated in that glossy, rich mushroom butter.
Step 6: Serve and enjoy
Serve immediately while the pasta is warm and fragrant. The butter will lightly cling to the noodles, and the mushrooms add just enough richness to make this feel like something from a cozy Italian bistro.

Notes and Troubleshooting
Notes:
- Fresh herbs like parsley or thyme add a little lift at the end.
- A sprinkle of parmesan or pecorino is a lovely finishing touch.
- This pairs perfectly with a glass of red wine and candlelight.
Troubleshooting:
- If your mushrooms release too much water, increase the heat slightly to let the liquid evaporate before adding pasta.
- If your sauce feels too rich, add a splash of reserved pasta water to loosen it.
Storage
This dish is best enjoyed fresh, but leftovers can be stored in an airtight container for up to 2 days. Reheat gently on the stovetop with a small pat of butter to revive the sauce.
Serving Ideas
Serve as a main dish for date night, or as a side with grilled chicken or steak. It’s also delicious spooned over toasted bread for a lighter lunch or added to a creamy risotto-style bowl with extra mushrooms.
Why You’ll Love This Recipe
- Quick and easy to make
- Budget-friendly but feels indulgent
- Comforting and rich without being heavy
- Ideal for date nights, meatless Mondays, or cozy solo dinners
FAQ
Can I use olive oil instead of butter?
You can, but it will lose some of that signature richness. Butter gives the sauce its smooth texture and depth of flavor.
What kind of pasta works best?
Egg noodles, fettuccine, or linguine are ideal since they soak up sauce beautifully.
Can I add protein?
Absolutely. Try shrimp, grilled chicken, or even a poached egg on top.
