One thing that has surprised me since moving to the U.S. is just how many families rely on convenience snacks to get through busy weeks. I completely understand why.
When teenagers are constantly hungry, work schedules are hectic, sports practice finishes late, or everyone seems to be eating at different times, it’s nice to have something ready to grab from the fridge.
Around here those convenience store Tornados and frozen taquitos disappear at an alarming speed.
They’re tasty enough, but they aren’t exactly gentle on the grocery budget when you have people who could happily eat several in one sitting.

So these days we’ve started making more and more of those favorite convenience foods ourselves.
Instead of shredded chicken like my Smoky Chicken Taquitos, this version uses seasoned ground beef blended with cream cheese, shredded Mexican blend cheese, smoky chipotle sauce and ranch seasoning. Everything melts together in a small slow cooker while you get on with your day.
Once the filling is ready, rolling the taquitos takes surprisingly little time.
I usually make a whole tray while I’m already in the kitchen making dinner. By the time they’ve baked and cooled, I can wrap them individually and tuck them into the refrigerator so they’re ready for lunches, after-school snacks, late-night hunger attacks, or those evenings when nobody seems to be eating at the same time.
They’re especially popular with active teenagers because they’re filling without feeling overly heavy.
The creamy filling keeps the beef moist, while the lightly seasoned oil brushed over the tortillas gives them a crisp golden shell in the oven without needing to deep fry anything.
Another thing I love about making these at home is that you can adjust everything to suit your family.
Want them milder? Reduce the chipotle sauce. Need a little more heat? Add some jalapeños or extra hot sauce. Prefer Colby Jack instead of Mexican blend? Go right ahead.

Ingredients
Makes 16 to 18 taquitos
Filling
- 1/2 lb ground beef
- 8 oz block cream cheese, cut into roughly 1-inch cubes
- 1 cup shredded Mexican blend cheese
- 1 tbsp ranch seasoning
- 1/4 cup Cholula Chipotle Hot Sauce, or similar smoky chipotle sauce
- 2 tbsp half and half, or milk
Taquitos
- 8 to 9 small flour tortillas, cut in half
- 1/4 cup vegetable oil, olive oil, or avocado oil
- 1 tsp chili powder
- 2 tbsp Cholula Chipotle Hot Sauce, or similar
If you’re making your own tortillas, I highly recommend using my Homemade Bacon Grease Flour Tortillas. They’re soft, flexible, and bake beautifully crisp without cracking while you roll them.
Step-by-Step Instructions
Step One
Brown the ground beef in a large skillet over medium heat, breaking it up into small crumbles as it cooks.
Once fully cooked, drain away any excess grease and transfer the beef to a small slow cooker.
Step Two

Cut the cream cheese into roughly 1-inch cubes and add it to the slow cooker along with the shredded Mexican blend cheese, ranch seasoning, chipotle hot sauce, and half and half.

Give everything a quick stir. It won’t look fully combined yet, and that’s perfectly normal.
Cover and cook on HIGH for 1 hour or LOW for 2 hours, stirring once or twice as the cheeses melt together into a rich, creamy filling.

When the filling is hot and smooth, switch off the slow cooker and remove the lid. Allow it to cool slightly while you prepare the tortillas.
Step Three
Preheat your oven to 425°F.
Line a baking sheet with parchment paper.
Cut each small flour tortilla in half to make 16 to 18 taquito wrappers.
Step Four

In a small bowl, whisk together:
- 1/4 cup vegetable, olive, or avocado oil
- 1 tsp chili powder
- 2 tbsp chipotle hot sauce
This flavored oil helps the tortillas crisp beautifully in the oven while adding another layer of smoky flavor.
Step Five

Lay one tortilla half on a cutting board with the straight edge facing you.
Spoon about 2 tablespoons of filling along the straight edge.
Lightly brush a little of the flavored oil along the curved edge before rolling. This helps seal the taquito while it bakes.
Roll tightly and place seam-side down on the prepared baking sheet.
Continue until all of the filling has been used.
Step Six

Lightly brush the tops and sides of every taquito with the remaining flavored oil.
Don’t skip this step. It helps create that crisp golden exterior without needing to deep fry anything.
Step Seven
Bake for 20 minutes, or until the tortillas are lightly golden and crisp.
Keep an eye on them during the last few minutes since oven temperatures can vary slightly.
Step Eight
Allow the taquitos to cool for about 5 minutes before serving.
The filling will be extremely hot straight from the oven.

Step Nine
Serve warm with your favorite dipping sauces such as salsa, queso, sour cream, guacamole, or chipotle ranch.
Step Ten
If you’re making these for snacks throughout the week, allow the taquitos to cool completely before wrapping each one individually in plastic wrap and storing them in the refrigerator.
Wrapping them individually helps keep the tortillas crisp and makes them easy to grab whenever someone gets hungry.
Notes
- Cubing the cream cheese helps it melt much more quickly in the slow cooker.
- Stirring once or twice while the filling cooks helps everything combine smoothly.
- Homemade flour tortillas are softer and easier to roll without cracking.
- Don’t overfill the tortillas or they’ll be difficult to roll and may burst open during baking.

Troubleshooting
My filling seems too thick.
Add another tablespoon or two of half and half or milk and stir until smooth.
My taquitos keep unrolling.
Brush a little seasoned oil along the edge before rolling and always place them seam-side down on the baking sheet.
My tortillas cracked.
The tortillas may have dried out slightly. Warm them for a few seconds in the microwave before rolling if needed.
My taquitos aren’t getting crispy.
Make sure they’re brushed all over with the seasoned oil before baking and avoid overcrowding the baking tray.

Storage
- Store cooled taquitos individually wrapped in plastic wrap in the refrigerator for up to 3 days.
- Wrapping them separately keeps them from sticking together and helps prevent the tortillas from becoming soggy.
- Reheat in the oven, toaster oven, or air fryer until hot and crisp again.
