Method
- Remove the pan insert from your bread machine. Mix the warm water and condensed milk, pour into the pan, add sugar and yeast, stir, cover, and leave 5 to 10 minutes until frothy. If not, start again.
- Add the eggs and cubed butter. Add the flour on top without mixing. Make a small well, add the salt, and lightly cover it.
- Place the pan back into the bread machine, select the dough cycle, and press start. This usually takes around 1 hour 30 minutes.
- Once finished, tip the dough onto a lightly floured surface and divide into 12 equal pieces.
- Roll each piece to about 1/4 inch thick, add 1 tbsp Nutella to the center, then pull the edges over and pinch tightly to seal.
- Place seam side down on a parchment lined baking sheet, cover, and let rise for 1 hour until puffy.
- Make an egg wash by beating together an egg and 2-3 tbsp water. Brush the egg wash lightly across the tops of the rolls.Then bake in a preheated 375°F oven for 15 minutes until golden.Transfer the baked rolls to a cooling rack and enjoy warm or cooled. Enjoy!

- Condensed milk gives the brioche its rich, soft texture
- Seal the dough well so the filling stays inside
- Nutella can be swapped for other fillings
Storage
- Store in an airtight container for up to 3 days.
- Wrap individually in plastic wrap and place into a sandwich bag for easy grab and go snacks.
- These freeze very well. Freeze once cooled, then thaw at room temperature or warm gently in the microwave for a soft center again.
Note on dough size:
This is a rich brioche dough and it rises a lot during the dough cycle. In my compact Cuisinart bread machine it almost reaches the top of the pan and that is totally normal. If your machine is on the smaller side or you prefer handling less dough, just make half the recipe and run the dough cycle as usual.Related Recipes:
