Equipment

  • Large 2-gallon freezer bag
  • Measuring spoons and cups
  • Instant Pot Pro (any electric pressure cooker works, I just love my Pro for its sturdy handles)
  • KitchenAid mixer with paddle attachment for shredding chicken (forks will do just fine too)
  • Small bowl for mixing cornstarch slurry
  • Spoon or whisk for stirring
  • Pasta pot and colander for boiling noodles while the chicken cooks

Ingredients

For Freezer Meal:

  • 3 to 4 large chicken breasts (yes, straight from the freezer!)
  • 2 cups water
  • 2 tbsp chicken bouillon powder (or 2 stock cubes)
  • 1 pack cream cheese, cubed into 8–10 chunks (8oz)
  • 1 can cream of chicken soup
  • 1 packet Italian dressing mix (0.7oz, or about 2 tbsp homemade if you prefer)
  • 2 tbsp dried parsley flakes (optional, but adds color and freshness, substitute for red pepper flakes if you want some heat instead)

For Cooking:

  • ½ cup water or stock (to help the pot come to pressure)
  • 1 tbsp cornstarch
  • 3 tbsp water (for the slurry)


Freezer Meal Prep

Combine all the freezer meal ingredients in a large freezer bag. Seal tightly, flatten, and freeze flat for up to 90 days.

Don’t forget to label the bag with the name and cooking directions so you don’t find yourself guessing at dinner time!


Step by Step Instructions

Step 1 – Make the freezer meal

Step 2 – Load the Instant Pot

Remove the bag from the freezer and run under cold water for one minute to loosen it from the plastic.

Place the frozen block into your Instant Pot and add ½ cup water.

Make sure the lid is set to SEAL, not VENT.

Step 3 – Pressure cook

Cook on HIGH pressure for 25 minutes and do a QUICK release

Set to High Pressure and cook for 25 minutes. Frozen chicken breasts always need a solid 25 minutes to cook through and shred easily.

Step 4 – Prep your pasta

While the Instant Pot is doing its job, boil your pasta or prep whatever side you’re serving this with.

When the timer beeps, perform a quick release. Remove the chicken breasts and shred using two forks or a KitchenAid mixer.

Step 6 – Thicken the sauce

use SAUTÉ mode on your Instant Pot to thicken the sauce with a cornstarch slurry before adding the shredded chicken back to the pot

Switch the Instant Pot to SAUTÉ mode.

Mix the cornstarch and water in a small bowl to make a slurry, then stir it into the hot sauce until thickened.

Return the shredded chicken to the pot, stir, and let it heat through.
