How to Make Easy and Delicious Chocolate Cookies out of a Box Brownie Mix!

Hi! If you’ve been following me for long you’ll already know this, but for those who are new, welcome to Far From The Farm. I’m Mona, the Brit behind the recipes, learning life and food in the States while sharing our debt-free journey and what’s on the menu in our home today!

Rainy days are funny things, aren’t they? Cozy and peaceful on one hand, inconvenient and soggy on the other. You want comfort food, but the last thing you feel like doing is running out to the store in the rain.

That’s exactly how these cookies came to be. We were craving something sweet, it was pouring outside, and all I had in the pantry was a lone box of brownie mix. No chocolate chips. No flour. Just that one box, and a craving that wouldn’t quit.

Make these simple cookies using a few staple ingredients and a box brownie mix!

So, with nothing but a box mix and some determination, we experimented. Every online recipe I could find called for extra flour to make the dough thicker, but since I didn’t have any, I decided to chill the dough overnight instead. I figured it might help it hold shape, and it did!

The next day, I baked them and oh my goodness. These cookies turned out chewy, rich, and deeply chocolatey. They’re the perfect cross between a brownie and a cookie, with that classic crackly top and fudgy center.

And the best part? They use only pantry staples. No fancy ingredients, no high cost. Just a quick mix, a little patience, and a tray of cookies that taste like pure indulgence. Perfect for cozy weekends, rainy afternoons, or when you just don’t want to spend extra on store-bought treats.

Recipes like this fit right into our current season of life. They’re simple, budget-friendly, and delicious. We’re working our way through baby step 2 of our debt-free journey, so any time I can make something from what’s already in the pantry, it feels like a win.

Equipment

  • KitchenAid stand mixer with paddle attachment and mixing bowl
  • Measuring cups and spoons
  • Spatula or spoon
  • Plastic wrap
  • Cookie scoop
  • Baking sheet
  • Parchment paper

Ingredients (Makes about 10–12 large cookies)

  • 1 box brownie mix (I used Duncan Hines 18.3 oz, as shown)
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ tsp salt
  • ⅓ cup vegetable oil

Step-by-Step Instructions

Step 1. Combine your ingredients.

Add your brownie mix, eggs, vanilla, salt, and oil to the bowl of your stand mixer.

Mix all the ingredients together, cover with plastic wrap and then chill the dough, over night if possible.

Step 2. Mix.

Using the paddle attachment, mix on low speed until everything comes together. Scrape down the sides with a spatula to make sure no dry bits remain.

Step 3. Chill the dough.

Cover the bowl tightly with plastic wrap and refrigerate overnight, or for at least 8 hours. This helps the dough firm up without needing to add flour and gives the cookies that chewy, brownie-like texture.

It’ll keep fine in the fridge for up to 48 hours before baking.

Step 4. Preheat your oven.

When ready to bake, preheat your oven to 375°F and line your baking sheet with parchment paper.

Step 5. Scoop the cookies.

Use a cookie scoop or two spoons to portion out about 2 tablespoons of dough per cookie. You can roll them in edible glitter, powdered sugar or leave them plain.

Place them on the lined sheet 2 to 3 inches apart. Do not flatten them.

Scoop out the chilled cookie dough with a large cookie scoop and place on a parchment lined baking sheet.

Step 6. Bake.

Bake in your preheated oven for 12 to 15 minutes. For fudgier cookies, aim closer to 12 minutes. For a slightly firmer cookie, go up to 15.

Step 7. Cool and enjoy.

Remove from the oven and allow them to cool for a few minutes on the baking sheet before transferring to a cooling rack.

They’ll set as they cool. Enjoy warm or room temperature, both are divine.

Notes and Troubleshooting

Notes:

  • The overnight chill replaces the need for flour, giving these cookies a rich, chewy texture.
  • You can mix in whatever you have, like chocolate chips, chopped nuts, M&M’s, or crushed candy.
  • Different box brownie brands may vary slightly in consistency. If your dough feels too sticky, chill it a bit longer.

Troubleshooting:

  • If cookies spread too much, chill longer next time or scoop smaller portions.
  • If they’re dry, try reducing baking time by 1 to 2 minutes.

Storage

  • Store cookies in an airtight container at room temperature for up to 4 days.
  • You can also freeze baked cookies for up to 2 months. Just let them thaw before serving or warm them briefly in the microwave for that fresh-baked feel.

Serving Ideas

  • Sandwich two cookies with ice cream for an easy dessert.
  • Crumble one over vanilla yogurt or whipped cream.
  • Gift them in a jar tied with ribbon for an affordable homemade treat.

FAQ

Can I use a different brownie mix brand?

Yes! Just stick to the standard 18 – 19 oz box and adjust baking time by a minute or two if needed.

Can I skip chilling the dough?

You can, but the cookies will spread more and be thinner. The overnight chill makes them thick and chewy.

Can I double this recipe?

Absolutely. You can double it easily, it scales perfectly for freezer batches.
