
Leftover Sausage Turned Into an Easy and Filling Breakfast for Busy Mornings!
Some recipes start because life demands something warm and fast, and this is one of them. I made this for the first time on a cold Sunday morning when we needed something filling before heading out the door.
It worked so well that my husband asked for it again the very next day. That is always my sign that something deserves to be written down – if only so I have to hand whenever I want to make it again!

Breakfast is one of those meals I am always trying to improve. I want warm options available for my family, especially in the cooler months or when my husband has been called out in the night and needs something hearty before work.
But not every morning allows the luxury of standing at the stove for ages. Some days you need something warm, filling and fast.
As a Brit recently moved to the States, I have been introduced to a whole world of Mexican inspired dishes that were completely new to me. My sweet friend Julie at Our Beautiful Chaos has been such a guide on that front with her Mexican whole food recipes.
She showed me just how easy it is to create simple meals with tortillas and cheese and a bit of imagination!

One of the first dishes I fell in love with here was the humble quesadilla. If you are new to them too, think of it as a warm toasted sandwich made with soft tortillas. Melted cheese in the centre, crisp edges, and whatever filling you like tucked inside. Simple and perfect!
But when it comes to breakfast my husband loves his meat, so I started folding leftover home cooked sausage crumbles into the mix along with a few eggs and plenty of cheese. The result was this breakfast on the go sausage and egg quesadilla that has become one of our weekday favourites.
It is filling, fast, budget friendly and it travels well. Honestly, we just cut it into quarters with a pizza cutter, place it on a disposable plate and wrap it in foil. Then out the door we go. No fuss!
Since the sausage crumbles already have great seasoning and I cook my eggs in a bit of bacon grease, I rarely need to add more salt or pepper, but feel free to adjust things to your taste. A little hot sauce packet or a tiny bottle tucked into your bag is never a bad idea either.

Ingredients
Makes 1 Breakfast Quesadilla
- 1 – 2 tsp bacon grease
- 1/4 cup cooked sausage crumbles (I use my own home cooked ground sausage straight from frozen)
- 3 eggs, beaten
- 1 cup Mexican blend shredded cheese, divided into two 1/2 cup portions
- 2 large flour tortillas
Step by Step Instructions
Step 1. Warm the sausage
Place the bacon grease in a frying pan over low heat. Add the cooked sausage crumbles and stir for 2 to 4 minutes. If your sausage is frozen, aim for the longer time.

Step 2. Cook the eggs
Beat the eggs in a bowl and pour them into the pan with the sausage. Stir gently for 2 to 3 minutes until the eggs are cooked through.
Step 3. Add the first layer of cheese
Sprinkle half a cup of shredded cheese over the sausage and egg mixture.

Step 4. Add the first tortilla
Place one tortilla directly on top. Press gently so the cheese helps it attach.

Step 5. Flip carefully
After about one minute, flip the whole thing over. You can use a plate to help you flip it neatly (like me) if that feels easier.
Step 6. Add the second layer of cheese
Sprinkle the remaining cheese on top of the filling. Place the second tortilla over it and press down lightly.
Step 7. Cook the second side
Turn the heat up to medium high and cook for 1 to 2 minutes until lightly golden. Flip again.

Step 8. Finish and serve
Cook the final side for another 1 to 2 minutes.
Slice into quarters with a pizza cutter. Serve warm with hot sauce or spicy salsa. Wrap in foil if eating on the go.
