I won’t pretend this is restaurant food because it isn’t trying to be. But it is very definately the sort of dinner that quietly gets everyone fed after a busy day.
Creamy, comforting, packed with chicken and vegetables, topped with crispy potatoes and melted cheese. Every single time I’ve made it, the casserole dish has been scraped clean by the end of dinner, and that’s usually all the review I need.
Lately I’ve become far more dependent on pantry and freezer staples than I ever imagined I would be. Having cooked chicken already waiting in the freezer, a couple of cans in the pantry, frozen vegetables, or a bag of tater tots means dinner doesn’t fall apart just because I’m tired or life has become unexpectedly busy.

- 1 1/2 tbsp minced garlic
- 1/2 cup water
- 1 1/2 tbsp nonfat dry milk powder
- 1 tsp salt, or to taste
- 1 tsp black pepper, or to taste
- 2 cups cooked shredded chicken
- 32 oz frozen tater tots
- 1 to 2 cups shredded cheddar cheese

How to Make Easy Pantry Chicken Pot Pie Tater Tot Casserole
Step 1. Make the Creamy Chicken Pot Pie Filling
Place the cream of chicken soup, drained mixed vegetables, frozen diced onion, minced garlic, salt, and pepper into a large saucepan or Dutch oven.

Step 2. Stir Together the Milk Mixture

In a measuring jug, whisk together the water and nonfat dry milk powder until completely dissolved.
Pour it into the saucepan with the soup mixture.
If you’re using regular milk or an unsweetened plant milk instead, simply pour that straight into the pan and leave out the milk powder. Stir everything together.
Step 3. Heat the Filling
Place the pan over medium heat.
Cook for 5 to 10 minutes, stirring occasionally, until everything is warmed through and the filling is hot and creamy.

Once heated, stir in the cooked shredded chicken until evenly combined.
You aren’t trying to reduce the mixture here, just bring everything together into a rich, creamy filling.
Step 4. Prepare the Baking Dish
Preheat your oven to 400°F.
Lightly spray a 9 x 13-inch casserole dish if desired.
Carefully spoon the hot chicken mixture into the dish and spread it into an even layer.

Step 5. Add the Tater Tots
Arrange the frozen tater tots over the top of the filling.
You can line them up neatly if you enjoy a more uniform look (my husband loves that so this is how I prepare it for our family), or simply spread them over the casserole like a mad chaos kitchen fairy.

Both methods work perfectly!
Step 6. Bake
Bake uncovered for 45 minutes.
During this time the filling becomes bubbly while the tater tots turn beautifully crisp and golden.
Step 7. Add the Cheese

Remove the casserole from the oven.
Sprinkle 1 to 2 cups shredded cheddar cheese evenly over the top.
Place the casserole under the broiler for about 5 minutes, watching carefully, until the cheese is melted, bubbling, and lightly browned.
Step 8. Rest Before Serving

Remove the casserole from the oven and allow it to rest for 5 minutes before serving.
The filling will be extremely hot and resting gives it time to settle slightly, making it much easier to scoop.

Notes
Top Tip: You can turn this into a true one-pot chicken casserole by making the filling in a large Dutch oven. Once the filling is hot, simply top it with the frozen tater tots and bake the whole dish in the same pot.
- Drain the canned mixed vegetables well before adding them to the filling. Extra liquid can make the casserole thinner than intended.
- Frozen tater tots should go straight from the freezer onto the casserole. There’s no need to thaw them first.
- I usually use about 1 cup of cheddar cheese, but if your family loves a cheesier topping, go ahead and use 2 cups.
- This recipe is perfect for using leftover cooked chicken, rotisserie chicken, or meal-prepped shredded chicken from the freezer.
- If you’d like even crispier tater tots, arrange them in a single layer instead of piling them on top of each other.
Troubleshooting
My casserole seems a little runny. What happened?
The canned vegetables may not have been drained well enough, or the casserole may simply need to rest for 5 to 10 minutes after baking. It will continue to thicken as it cools slightly.
My tater tots aren’t crispy enough.
Bake uncovered and finish the casserole under the broiler for 3 to 5 minutes after adding the cheese. Keep a close eye on it so the cheese doesn’t burn.
The filling seems too thick before baking.
Stir in an extra splash of water, milk, or chicken broth until it reaches a creamy consistency.
My cheese browned too quickly.
Wait until the final few minutes of baking before adding the cheese, then broil just until melted and bubbling.
The casserole isn’t hot in the center.
Oven temperatures vary. Continue baking for another 5 to 10 minutes and check that the filling is bubbling around the edges before serving.

A Note for My UK Readers: If you are making this back home in the UK, look for frozen potato croquettes or even a layer of frozen hash browns! They make the perfect substitute for American tater tots and give you that same golden, crispy top.

- Refrigerating: Allow the casserole to cool before covering or transferring leftovers to an airtight container. Store in the refrigerator for up to 4 days.
- Reheating: Reheat individual portions in the microwave until piping hot throughout. Or for larger portions, cover the casserole with foil and warm in a 350°F oven for about 20 to 25 minutes, or until heated through.
- Freezing: You can freeze this casserole either before or after baking. Wrap the casserole dish tightly with plastic wrap followed by foil, or transfer portions to freezer-safe containers. Freeze for up to 3 months.
