Between trying to organize life, keep the house running, prepare for another transition, and still get decent dinners on the table every night whilst, Iโve been concentrating heavily on cheaper cuts of meat lately to stretch our budget a little more, and trying to make them feel exciting instead of repetitive.
Chicken thighs and chicken drumsticks are usually some of the cheapest proteins in the store around here, but if you cook them the exact same way every week they can start to feel a little boring pretty quickly.
So Iโve been experimenting constantly lately with different seasoning combinations, cooking methods, and ways to stretch ingredients further without meals feeling sad or restrictive.
And sharing these recipes with you guys genuinely helps. It makes this season feel a little less lonely somehow.
Up today? Sticky tangy BBQ chicken drumsticks slow cooked until ridiculously tender, then brushed with BBQ sauce and broiled until caramelized and crispy around the edges.
The smell in the kitchen while these finish under the broiler is divine!

One thing I wanted to do differently with this recipe was cut back on the sugar quite a bit compared to typical American BBQ drumstick recipes. As a Brit, some bottled sauces and recipes over here can end up tasting overwhelmingly sweet to me.
So instead of drowning everything in sauce from the beginning, we build a smoky spice coating first and then use just enough BBQ sauce right at the end to create that sticky glazed finish everybody loves.
It keeps the chicken flavorful without becoming cloyingly sweet and also helps stretch the BBQ sauce bottle further too which matters when youโre feeding a family on a budget.
The cayenne pepper sounds scarier than it actually is too. It does not make the chicken super spicy. It just adds a tiny little warmth and zing that lifts the whole flavor and keeps it from tasting flat. If your family dislikes spice completely you can absolutely leave it out though.
Serve these with potatoes, rice, salad, mac and cheese, frozen veggies, or even tucked into wraps the next day. Theyโre incredibly flexible and work with whatever your grocery budget looks like that week.

If youโve never tried using your Instant Potโs slow cooker function, take this as your friendly nudge. Itโs such a game changer!
Not only does it keep the counter from being cluttered with extra gadgets, but if youโre using an Instant Pot Pro like I do, you can switch straight from sautรฉing to slow cooking in the same pan. Total time saver.
Itโs been one of my favorite ways to speed up mealtimes while keeping things low-cost, cozy, and family friendly with almost no effort! Give it a whirl with this recipe today! Hereโs what I use in my kitchen:

- Large bowl
- Measuring spoons
- Slow cooker or Instant Pot with slow cooker lid
- Baking sheet
- Aluminum foil
- Silicone pastry brush

Ingredients
Serves 2-4
- 3 lbs chicken drumsticks, skin-on bone-in
- 1 1/2 tbsp brown sugar
- 1 1/2 tbsp smoked paprika
- 1 tsp dark chili powder
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp salt
- 1 tsp black pepper
- 1/4 tsp cayenne pepper (optional)
- 1/2 cup bottled BBQ sauce
Step-by-Step Instructions
Step One
Place the chicken drumsticks into a large mixing bowl.
Pat them dry lightly with paper towels first if they seem especially wet from the packaging. This helps the seasoning stick better.
Step Two
Sprinkle the brown sugar, smoked paprika, dark chili powder, garlic powder, onion powder, salt, black pepper, and cayenne pepper over the chicken.
The spice mixture smells amazing already at this stage and gives the chicken that smoky BBQ flavor long before the sauce ever touches it.

Step Three
Mix everything together really well until every drumstick is fully coated in the seasoning mixture.
Use your hands or food tongs and make sure you get seasoning into all the little folds and edges around the chicken skin.
Step Four
You can spray your slow cooker or Instant Pot insert lightly with cooking spray or use a liner if preferred, but we usually place the chicken straight into the pot without either.
Arrange the drumsticks inside with no added liquid.
Do not add the BBQ sauce yet.
This part matters more than people realize because allowing the dry seasoning mixture to slowly cook into the meat first gives the chicken a much deeper smoky flavor instead of just tasting like bottled sauce.
And on the budget side of things, stretching the BBQ sauce further is part of the point too right now for us. Weโre cooking these meals intentionally while paying off debt, not just pretending for blog content.
Using less sauce also cuts back the sugar quite a bit compared to traditional BBQ chicken recipes.

Step Five
Cook using one of the following methods:
Traditional Slow Cooker
- Cook on LOW for 5-6 hours or HIGH for 3-4 hours.
Instant Pot Slow Cooker Function
- If using an Instant Pot as a slow cooker, always use the HIGH slow cook setting because Instant Pots typically run cooler than traditional slow cookers.
Cook on HIGH slow cook for 5-6 hours until the chicken is fully cooked and very tender.
Step Six
Carefully transfer the cooked drumsticks onto a foil lined baking sheet.
Be gentle because the chicken becomes incredibly tender and can fall apart very easily at this stage.

Step Seven
Brush each drumstick generously with your favorite BBQ sauce using a silicone pastry brush.
You can do one lighter layer or go heavier depending on your familyโs preference.

Step Eight
Place the tray under the broiler for 2-5 minutes until the BBQ sauce becomes sticky, caramelized, and slightly crispy around the edges.
Watch closely because BBQ sauce can go from perfect to burnt surprisingly fast under the broiler.
Step Nine
Brush with a little extra BBQ sauce if desired and serve immediately.
Absolutely delicious, ridiculously cheap, and perfect with simple sides like rice, roast potatoes, or salad.

- Dark chili powder adds extra smoky flavor but regular chili powder works perfectly too.

- You can use thighs instead of drumsticks if thatโs what is cheapest at your store.

Troubleshooting
My chicken skin is too soft
Broil slightly longer at the end until crispier.
My BBQ sauce burned
Your broiler may run very hot. Move the tray slightly lower or reduce broiling time.
My chicken seems watery
Chicken naturally releases liquid during slow cooking. This is completely normal.
My chicken is not tender enough
It likely needs longer cooking time. Drumsticks become much more tender the longer they cook gently.
