After a bit of trial and error, and more than a few loaves that didn’t quite rise, I finally created what our family calls The Perfect Easy Bread Machine Oatmeal White Loaf.

It’s everything I love about homemade bread. It’s soft, lightly sweet, and with just the right hint of oaty texture. It’s simple, cozy, and works beautifully for sandwiches, toast, or warm with butter straight from the machine.

If you’re new here, you’ll quickly learn that I am such a fan of using a bread machine for dough. It has been one of the biggest helps in my kitchen, especially during busy or overwhelming seasons.

My parents gifted me this little Compact Cuisinart Bread Machine recently when I moved from the UK to the States after getting married, and it has worked like a little powerhouse ever since!

It kneads beautifully. It rises dough evenly. It keeps everything contained in one pan so I am not dealing with flour across every surface of the kitchen.

And on days where the house feels chaotic or I am juggling too much, I can add the ingredients, press the dough button, and let it get on with the work while I focus on everything else.

It takes away so much of the guesswork and makes homemade bread, pizza dough, cinnamon rolls, soft rolls, and sweet bakes feel much simpler.

Equipment

  • Bread machine (I use a Cuisinart Compact)
  • Measuring jug

Ingredients (2 lb loaf)

  • 1 & ½ cups warm milk (microwave about 45 seconds)
  • ⅓ cup packed light brown sugar
  • 2 & ¼ tsp bread machine yeast (one packet)
  • 4 tbsp salted butter, cold and cubed
  • 1 cup old-fashioned oats
  • 3 cups bread flour (or all-purpose)
  • 1 tsp salt


Step-by-Step Instructions

Step 1. Prep your yeast.

I like to do this part with the pan out of the machine so nothing spills into the mechanics as I’m clumsy!

Add the warm milk, brown sugar and bread machine yeast into the bread machine pan insert.

Cover the pan with plastic wrap and let it rest for 5 to 10 minutes until it looks bubbly and frothy. That’s how you know the yeast is alive and ready to go.

Here’s the part no bread machine manual ever seems to tell you. If the yeast doesn’t bloom here, don’t keep going. I’ve had to throw out whole loaves before because the yeast was bad, and you won’t find out until it’s baked if you add it last like most manuals say.

Taking five minutes now saves three wasted hours later!

After 5 to 10 minutes your yeast mixture should be frothy and have some bubbles (bottom right), so you know that it is ‘active’

Step 2. Add the butter.

Once your yeast has bloomed, drop in the cubed butter. No need to stir — the machine will handle it.

Add in your butter, oats and flour, no need to mix anything.

Step 3. Add oats and flour.

Sprinkle the oats right over the top, then add the flour.

Step 4. Add the salt last.

Make a small well in the top of the flour and add your salt there. Gently cover it with a little more flour.

Add your salt into a little ‘well’ in the top of your flour and cover it over.

This helps keep the salt from touching the yeast too soon, which can affect your rise.

Step 5. Start your machine.

Place the bread pan back into the machine. Select the White Bread cycle, choose a 2 lb loaf, and your preferred crust color. Press start!

My machine usually takes about 3 ½ hours from start to finish.

Sprinkle some additional oats on the top of the dough during the final rise in your bread machine, for a fancy look like the store-bought kind.

Step 6. Sprinkle some optional oats before baking.

Totally optional but adds a lovely look to the bread, grab a few oats and sprinkle it on the loaf during that third and final rise before it bakes.

Step 7. Cool and slice.

Once the cycle ends, carefully remove the bread pan using oven gloves. Tip the loaf out onto a cooling rack and let it rest for at least 30 minutes before slicing.

Notes:

  • Try swapping 1 cup of bread flour for whole wheat flour to add a heartier texture.
  • Add a spoonful of honey if you like a slightly sweeter loaf.

Troubleshooting:

  • If your loaf sinks in the middle, your liquid may have been too warm. Next time, let the milk cool a little before adding the yeast.
  • If your bread is too dense check that your yeast was active, it should always foam during proofing.

  • Keep your cooled loaf in an airtight container or bread bag at room temperature for up to 3 days.
  • For longer storage, slice and freeze in portions. Toast or reheat slices directly from frozen.
