They’re also the very first cookies I baked after moving to the States, and one tray fresh from the oven convinced me they’d become our family’s go-to recipe.

Ingredients

  • 1 cup salted butter, softened
  • 1 cup granulated sugar
  • 1 cup light brown sugar, packed
  • 2 teaspoons vanilla extract
  • 2 large eggs
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • 1 teaspoon table salt
  • 1 bag of chocolate chips (12oz or around 2 cups)


Ingredient Swaps?

  • Butter – Salted is my go-to, but unsalted, browned butter, or even vegan butter/coconut oil all work.
  • Sugar – White sugar, cane sugar, or light/dark brown sugar. Dark adds a deeper molasses flavor.
  • Eggs – Swap in flax eggs, chia eggs, or egg replacers if needed.
  • Flour – Standard all-purpose or a gluten-free blend. Bread flour will give extra chew.
  • Chocolate Chips – Semi-sweet is classic. Mix in milk, dark, chopped bars, or even white chocolate.


Step-by-Step Instructions

Step 1. Preheat & prep

Preheat oven to 350°F. Line baking sheets with parchment paper.

Step 2. Mix dry ingredients

In a medium bowl, whisk together flour, baking soda, baking powder, and salt.

Step 3. Cream butter & sugars

In a large bowl, cream butter, white sugar, and brown sugar until pale and fluffy.

Tip: Forgot to soften butter? Microwave 7 seconds at a time, just until soft but not melted.

Step 4. Add eggs & vanilla

Beat in eggs and vanilla until smooth.

Step 5. Combine wet & dry

Slowly fold the dry mixture into the wet until just combined. Don’t overmix.

Step 6. Stir in chocolate

Add 2 cups of chocolate chips and stir until evenly distributed.

Step 7. Portion the dough

Scoop 2–3 tablespoons of dough into balls. Use a cookie scoop if you can as it keeps sizes consistent so they bake evenly.

Using a cookie scoop keeps the size a little more uniform.

Our family love that slightly larger cookie size, like the size that you get from the mall bakery stands – so we get between 18-22 cookies per batch which is what the cooking times here are based on.

Step 8. Bake

Place dough balls 2 inches apart on trays. Bake 11-14 minutes for the 18-22 cookies, you’ll need to adjust time to less if you prefer your cookies smaller.

Do not overbake. They should look soft and slightly pale in the center. They’ll finish setting as they cool.

Step 9. Cool

Let cookies rest on trays for 5 minutes, then transfer to a wire rack carefully, because they will still be very soft at this stage.

  • Stack them high with cold milk for a classic treat.

  • Bake on Christmas Eve to leave with milk for Santa.
  • Serve warm with ice cream for an easy dessert.

Ingredients
  

  • 1 cup salted butter - softened to room temp (not melted)
  • 1 cup granulated white sugar
  • 1 cup light brown sugar - packed works best
  • 2 tsp vanilla extract - or vanilla flavoring
  • 2 large eggs - room temp eggs tend to incorporate easier
  • 3 cups all purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1 tsp table salt
  • 1 12oz bag chocolate chips - about 2 cups worth

Method
 

  1. Preheat oven to 350°F. Line your baking sheets with parchment paper.

  7. Using a cookie scoop or rolling balls of dough about 2–3 tablespoons in size in your hands also works. Place them evenly spaced on your baking sheets.
  8. Bake for 11-14 minutes for the larger size like these, removing when cookies are lightly golden but still look slightly doughy in the center. If you prefer your cookies smaller you will need to adjust the time accordingly.
  9. Let sit on the baking sheet for 5 minutes, then transfer to a cooling rack gently because they are still very soft at this stage.
  10. Best enjoyed when cooled.

I use around 2-3 tablespoons of dough per cookie, but it doesn’t need to be exact.

Baking tips

Pull the tray when the cookies still look pale in the middle. They’ll finish setting as they cool, which keeps the centers chewy.
For convection ovens, lower the baking temp by about 25°F.
For an extra glamorous just-out-of-a-cookbook-look you can add 2 or 3 chocolate chips directly on top of your cookie balls before baking them, pressing them in slightly.

Freezing & storage

For dough: Scoop into balls, flash freeze on a tray until firm, then transfer to a freezer bag. Keeps up to 2 months.
For baked cookies: Store in an airtight tin or container for 4–5 days, or freeze baked cookies for 2 months.

Baking from frozen

Bake straight from frozen by placing dough balls on a lined sheet, setting the oven to 350°F, and baking for 14-16 minutes.
If you thaw first (about 1 hour on the counter), bake at 375°F for 9-10 minutes.
