This one came about in a very real, very normal way.

My husband loves Grapenuts cereal. Absolutely loves it. So when my lovely mother-in-law visited, she brought him a huge box as a treat. The kind of box that feels like it will last forever.

Except life gets busy. And if youโ€™re anything like us, things get pushed to the back of the cupboard and forgotten about.

My husband has pretty pronounced ADHD, and one of the things that comes with that is forgetfulness. So sure enough, while I was clearing out groceries the other day, I found that big box sitting right at the back with not a lot of time left before the use by date.

Nothing makes me feel like a bigger failure than when food goes to spoil. It’s so unnecessary especially when you think about how many others aren’t fortunate to have enough to eat, so I wasnโ€™t about to waste it.

So I started digging around for ideas and ended up over on the Grapenuts website, where I found a recipe for a crunchy peanut butter bar. That gave me a starting point. But like most of us I had a few other bits and pieces to use up too.

Leftover nuts from Christmas. Some oats sitting in the pantry. A half-used bag of chocolate chips.

So I started playing around.

And that is how these chocolate peanut butter no bake cereal bars came to life.

Theyโ€™re now one of those things that just quietly live in our fridge. My husband grabs one on his way out the door to have as breakfast with a coffee when heโ€™s running late. Or family will reach for one mid-afternoon when they need something filling but quick.

When it comes to making them, I do prefer using the stovetop for the peanut butter and sugar mixture rather than the microwave. It gives you more control and lets you stir as it comes together, which helps everything melt smoothly without catching.

And when you mix it all together, it will feel a bit stiff. Thatโ€™s exactly what you want. Keep going. Donโ€™t be tempted to add more corn syrup or liquid because that will stop them setting properly later.

If you want to dress them up, you absolutely can. A drizzle of melted chocolate or a layer of almond bark takes them into full treat territory. But honestly, this base version is what we come back to again and again.

Ingredients

Makes 16 bars

  • 1 1/2 cups peanut butter
  • 1 cup light corn syrup
  • 1 cup white sugar
  • 1/2 cup chopped nuts
  • 3 cups Grapenuts cereal
  • 1/2 cup old fashioned oats
  • 1 to 1 1/2 cups chocolate chips


Step By Step Instructions

Step One: Prepare the dry ingredients

Add the chopped nuts, Grapenuts cereal, and oats into a large mixing bowl. Give it a quick stir and set aside so everything is ready to go.

Step Two: Line your dish

Crumple up a sheet of parchment paper, then press it into your 9 x 13 baking dish. This helps it stay in place instead of sliding around.

Step Three: Heat the mixture

Add the peanut butter, sugar, and corn syrup to a saucepan over medium heat. Stir regularly as it begins to melt. Once everything is combined, reduce the heat slightly and keep stirring until smooth.

Step Four: Combine everything

Pour the hot peanut butter mixture over your dry ingredients.

Step Five: Mix thoroughly

Using a spatula, start folding everything together. It will feel thick and a little stiff. Thatโ€™s normal. Keep mixing until everything is evenly coated.

Step Six: Add the chocolate chips

Let the mixture cool slightly, then add the chocolate chips in 1/2 cup at a time, folding them through so they donโ€™t completely melt.

Step Seven: Press into the dish

Transfer the mixture into your prepared baking dish. Press it down firmly and evenly so the bars hold together once set.

Step Eight: Cool and cut

Allow the bars to cool completely, then cut into 16 squares.

Step Nine: Wrap and store

Wrap each bar individually in plastic wrap and place into a sandwich bag for easy storage.
