Method
- Add the chopped nuts, Grapenuts cereal, and old fashioned oats to a large mixing bowl. Stir briefly and set aside.
- Crumple a sheet of parchment paper and press it into a 9 x 13 baking dish so it stays in place.
- Add the peanut butter, light corn syrup, and white sugar to a saucepan over medium heat. Stir regularly as it melts. Once smooth and fully combined, reduce the heat slightly and keep stirring until everything is evenly melted together.
- Pour the hot peanut butter mixture over the dry ingredients.
- Using a spatula, fold everything together until evenly coated. The mixture will feel thick and stiff. Keep mixing and do not add extra liquid.
- Let the mixture cool slightly, then fold in the chocolate chips 1/2 cup at a time so they do not fully melt.
- Transfer the mixture to the prepared baking dish and press it down firmly into an even layer.
- Allow the bars to cool completely, then cut into 16 squares.
- Wrap individually in plastic wrap and store in a sandwich bag in the fridge.
Notes
- You can swap the nuts for whatever you have on hand
- Add dried fruit for a sweeter variation
- Chocolate chips can be adjusted to taste
- Mixture should be thick, not runny
Storage
- Store in the fridge as wrapped.
- These also freeze exceptionally well. Wrap individually in plastic wrap, place in a sandwich bag, and freeze.
- If frozen - let sit out for about 30 minutes before eating.
