  • 1 1/4 cup warm water
  • 3 tbsp honey
  • 2 1/2 tsp active dry yeast
  • 1 large egg
  • 1 1/2 tbsp salted butter, softened
  • 1/3 cup non-fat dry milk powder
  • 3 1/2 cups bread flour
  • 1 tsp salt

Step By Step Instructions

Add the warm water, honey and yeast to the bowl of your stand mixer, stir and cover for 5-10 minutes to allow the yeast to ‘proof’ (activate).

Step 1: Proof the yeast

Add the warm water, honey, and yeast to your stand mixer bowl. Stir gently. Cover loosely and let rest for 5 to 10 minutes.

The surface should look bubbly and slightly foamy. That tells you the yeast is active and ready, like the image below.

After 5-10 minutes the yeast mixture should be full of froth, foam and bubbles – that’s how you know it’s active!

If nothing happens, discard and start again. Old yeast will not give you fluffy rolls.

Step 2: Add remaining ingredients

Add the egg, butter, nonfat dry milk powder, bread flour and salt.

Once the yeast mixture is foamy, add the egg, softened butter, dry milk powder, bread flour, and salt.

No need to stir first. The mixer will take care of that.

Using a dough hook attachment knead the mixture for 5-7 minutes until it’s elastic and slightly tacky (above right). Then form into a rough ball, place back in the mixing bowl and cover for 1 hour, or until it has at least doubled in size.

You are looking for a smooth, elastic dough that is slightly tacky but not sticky. It should pull away from the bowl but still feel soft to the touch.

Step 4: First rise

Form the dough into a rough ball. Place it back into the mixing bowl. Cover with plastic wrap or a clean towel.

Let rise on the counter for about 1 hour or until doubled in size.

When the first rise is finished and the dough has at least doubled in size, tip it out on to a lightly floured surface (it will still be quite tacky but resist the urge to add more flour as this is what’s going to keep them pillowy-soft inside!)

Step 5: Shape the classic squares

Lightly flour your counter. Roll the dough into a large rectangle about 1/2 inch thick.

Fold it in half like a book and then roll out again to 1/2 inch thick rectangle. This gives that layered, pillowy texture.

Roll out the dough, fold it over, roll it out again and cut out those iconic square shapes. Perfection not needed here – they’re going to taste fantastic no matter what shape they are!

Use a knife or pizza cutter to cut into 20 to 26 small squares.

Place them on a parchment lined cookie sheet with slight space between each roll. Cover and let rest for another 30 minutes.

Step 6: Bake
