How to Make the Best Crowd-Pleasing Crockpot Cheese Dip for Football Season
Why This Dip Works for Game Day
It’s football season again, and if there’s one thing our crew can’t go without, it’s queso.
Chips in hand, TV blaring, everyone yelling at the screen and this cheesy dip sits right at the center of it all.
Now I’ll be honest, calling this a “recipe” feels a little generous. It’s really just two main ingredients, but when you put them together, magic happens.
My husband swears by this combo, and it’s the one thing the men in our family request every single game day.
What makes it so good? Convenience. You brown your sausage, dump in the queso, stir, and let the slow cooker do the work.
No stress, no fuss, and everyone is happy.
It also happens to pair perfectly with our Smokey Brown Sugar Hickory Bacon Jalapeño Poppers so if you’re making both, be prepared for a table full of very content football fans.
And as always these are real kitchen photos from me actually making this dip, not staged food photography.
I want you to see how it really looks at each step so you know exactly what to expect.
No Pinterest gaslighting here, just the queso we serve at our own game day parties!
Equipment

You don’t need a fancy kitchen to pull this dip together, just a couple of basics and you’re good to go:
- Small slow cooker – ours is a 1.5 Qt and it’s the perfect size for 1–2 jars of queso, enough to feed 2–6 people.
- Non-stick pan – for browning the sausage before it goes into the dip.
- Spatula or wooden spoon – makes stirring easier and keeps things from sticking.

Ingredients
This dip couldn’t be simpler. Just two main ingredients, but the combo makes it taste like you spent hours.
- 1/2 lb sausage, browned – we like using hot sausage for that extra kick, but mild or Italian sausage works great too.
- 1 x 15 oz jar Velveeta Queso Blanco (or your favorite jarred queso dip).
We usually do 1/2 lb of sausage per jar of queso. If you’re feeding a bigger group, double it up and toss in two jars plus a full pound of sausage.
Step-by-Step Instructions
Step 1 – Cook and brown your sausage of choice in a skillet. We usually skip draining, since a little extra flavor never hurts, but you can drain if you prefer.

Step 2 – While the sausage is cooking, add one jar of queso dip to a small slow cooker. We use a 1.5 qt size, which is perfect for this recipe.

Step 3 – Stir in the cooked sausage. As a guide, we use about 1/2 lb sausage per 15 oz jar of queso, but you can add more or less depending on your preference.
Step 4 – Cover and cook on low for 1 hour. This allows the flavors to meld and the cheese to fully warm through.
Step 5 – After that first hour, switch your slow cooker to high for 30 minutes. This thickens the dip slightly and gets it nice and bubbly.

Step 6 – Serve straight from the slow cooker. We leave it on the “low” setting with the lid off so guests can enjoy it warm for a couple of hours without it hardening.
Storage
We usually don’t have leftovers on game day, but on the rare occasion we do, this dip will keep in an airtight container in the fridge for up to 24 hours.
To reheat, give it a quick blast in the microwave, stirring halfway through until hot and smooth again.
Extra Tips
- We don’t recommend freezing this queso. The texture changes once thawed and it’s just not the same creamy dip everyone loves.
- You can swap the queso blanco for classic yellow cheese dip if that’s more your family’s style.
- Try adding diced green chiles or jalapeños for a little kick if you like extra heat.
- Serve with sturdy tortilla chips that can hold up to a thick, cheesy dip. Nobody likes a chip breaking mid-scoop!
Serving Suggestions
This dip is best served warm, right out of the slow cooker. We usually just leave it on the counter with the lid off and the cooker set to “low” so everyone can keep going back for more during the game.
Pair it with sturdy tortilla chips, pretzel bites, or even fresh-cut veggie sticks if you want something lighter alongside the cheese. It also works beautifully as a topping for baked potatoes or drizzled over nachos.
And if you’re putting together a full game day spread, try it alongside my Smokey Brown Sugar Hickory Bacon Jalapeño Poppers – the sweet and spicy poppers with this creamy queso dip are a winning combo every single time.
