This recipe actually came to me from one of my sweet sister-in-laws, Rachel.

Back when I first moved to the States, I was hunting for meals that felt familiar to me but still worked for the American side of my family. Rachel shared this dirty rice shortcut that her teens loved, and it quickly became a keeper.

Now we’ve added our own touches, like a little extra spice and a sprinkle of cheese, but the heart of the recipe never changed. It’s frugal. It’s fast. And it feeds a crowd without demanding much effort.


Equipment

Every kitchen has its basics, but for this rice dish you’ll only need a few.

  • A solid pot with a lid for browning beef and simmering rice

  • A sturdy spoon or spatula for stirring and serving
  • measuring jug for adding water
  • A small measuring spoon for the red pepper flakes

All it takes is some simple pantry ingredients and some cheese!

Ingredients (Serves 4)

  • 2 boxes Rice-a-Roni Beef Rice (or your favorite boxed beef rice mix)
  • 1 ½ pounds ground beef, cooked and drained (we batch cook and freeze ours for speed)
  • 5 cups water (or amount directed on your box if using a different brand)
  • 1 beef stock cube
  • ¼ to ½ teaspoon dried red pepper flakes
  • Optional: salt and pepper after cooking (taste first, the rice mix is already seasoned)
  • Optional: 1 cup grated cheddar cheese for topping


Step-by-Step Instructions

I freeze up batches of ground beef ahead of time to speed up mealtimes on busy nights.

Step 1: Brown the ground beef in your pot. Drain using a colander, then return the beef to the pot.Tip: we cook beef in big batches, drain, and freeze it in meal-size bags so recipes like this come together even faster.

Step 2: Skip the box’s step about frying the rice in butter. The beef has enough grease to do the job. Add both boxes of rice directly into the beef.

Step 3: Stir in 5 cups water, the beef stock cube, both seasoning packets from the boxes, and the red pepper flakes.

Step 4: Turn the heat to high. Bring the mixture to a boil. Lid on or off, it doesn’t matter at this stage.

Turn on HIGH heat to start and then switch to LOW-MEDIUM to simmer.

Step 5: Once boiling, lower the heat to medium-low. Cover with the lid and simmer for 20 minutes, or follow the cooking time listed on your rice brand.

Step 6: Stir a couple of times during the simmer to keep the rice from sticking. Some will stick anyway – don’t stress, it’ll soak off quickly with some dish soap and warm water whilst you eat!

Step 7: Taste and season if needed. Sprinkle with grated cheddar if your family likes the cheesy finish. Serve hot.

  • Rice too soft or too firm: Double-check your water measurement against the boxed directions and simmer gently, not at a rapid boil. Adjust by adding or holding back a splash of water next time.

  • Seasoning too strong: Boxed rice can sometimes lean salty. Taste before adding extra salt, and if it’s still too much, serve with plain bread or a simple salad to balance.
