There are a handful of recipes my husband will request again and again, and these sausage stuffed bacon wrapped jalapeño poppers are one of them.
They show up for game days, UFC nights, family get togethers, or any moment where I want something hearty and fun without spending a fortune.
My crew is easy to please. Give them something crunchy, salty, meaty or cheesy and they are happy, which honestly takes so much pressure off hosting.
These are the kind of poppers that stop conversations mid sentence. Smoky bacon, creamy filling, savory sausage and that tiny touch of sweetness all melt together into something that tastes far more indulgent than the effort it takes to make them.
They feel like proper game day food but also like something you could put out at a holiday gathering and still get endless compliments. They are simple, reliable, full of flavor and they hold up beautifully when made the night before which has saved me more times than I can count!

From a budget perspective these are a big win too. We are still in baby step 2 on our debt free journey, so buying trays of ready made high-end jalapeño poppers from the store is not really an option.
A bag of jalapeños, some sausage, cream cheese and a pack of bacon stretches so much further and feeds a crowd without blowing the grocery budget.
That is the part of home cooking I have grown to love most. Food that feels a bit luxurious but still fits inside a real life budget.

- Long handled sundae style spoon
- Measuring cups and spoons
- Small mixing bowl
- Silicone spatula (or just use your hands!)
- Baking dishes (two 9 x 13’s will be fine)
- Plastic wrap if prepping ahead

Ingredients

Makes 20 poppers
- 10 large jalapeños, halved lengthways and deseeded
- 16 oz hickory smoked bacon
- 1/4 lb cooked ground sausage (Hot Sausage is what we use!)
- 4 oz cream cheese, softened
- 1/2 cup shredded Mexican blend cheese, or cheddar or pepper jack
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/3 cup brown sugar, light or dark
Step by Step Instructions
Step 1. Preheat oven to 400°F.
Step 1. Prepare the jalapeños.
Wash them, slice lengthwise and scoop out the seeds. A sundae spoon works brilliantly for this. I keep the stems on because they act like little handles but remove them if you prefer.

Step 3. Make the filling.
In a mixing bowl combine the cooked sausage, softened cream cheese, shredded cheese, garlic powder and onion powder. The mixture is thick so I usually knead it together by hand.

Step 4. Portion the filling.
Divide the mixture into 20 equal pieces and roll each into a small sausage shape.
Step 5. Fill the jalapeños.
Press one portion into each pepper half. Fill them generously but do not mound too high or the bacon will slide during baking.
Step 6. Wrap with bacon.
Wrap each filled jalapeño with a strip of hickory smoked bacon. You usually will not need a whole strip per pepper. Thin cut bacon crisps more easily and caramelizes beautifully with the brown sugar.
Step 7. Arrange in your baking dishes.

Place the wrapped peppers into your baking dishes. No oil needed because the bacon provides plenty.
Step 8. Optional make ahead step.
At this point you could cover tightly with plastic wrap and refrigerate for up to 48 hours. When ready to bake, sit the dishes out for 30 minutes.
Step 9. Add the brown sugar.
Sprinkle the brown sugar evenly over the poppers. The sugar melts into a sticky caramel glaze as they bake.
Step 10. Bake for 20 to 25 minutes.
Bake until the bacon is crisp and the sugar has melted into a glossy glaze. Serve warm.

Notes and Troubleshooting
Notes
- Thin cut bacon crisps best but thick cut works well for a heartier appetizer – whichever you prefer is fine!
- If you want extra heat, keep a few seeds and mix them into the filling.
- These are very make ahead friendly and perfect for parties.
Troubleshooting
- Bacon not crisping: move dish to a higher oven rack or broil for 1 to 2 minutes.
- Filling spilling out: reduce how much you mound on top before wrapping.
- Sugar burning: loosely tent with foil for the last few minutes.

- Reheat in oven or air fryer until warmed through
- Freeze unbaked wrapped poppers on a sheet pan, then bag and freeze for up to 2 months
