The Ultimate Chicken Pot Pie Substitute Tater Tots for Pie Crust Shortcut!

“This easy pantry chicken pot pie uses crispy tater tots as a genius substitute for traditional pie crust. It is the perfect budget-friendly comfort food!”- Mona, Far From The Farm.

Easy Pantry Chicken Pot Pie Tater Tot Casserole is exactly the sort of recipe I find myself reaching for when I want something warm, filling, and comforting without needing a long shopping list.

It uses ingredients I nearly always have tucked away in the pantry, freezer, or fridge, making it perfect for those weeks when groceries need to stretch just that little bit further.

Chicken pot pie has become one of those wonderfully American comfort foods that completely won me over after moving to the States. It sits right alongside meatloaf, casseroles, biscuits and gravy, and all those hearty family meals that seem to appear on dinner tables across the country.

Hi! If you’ve been following me for long you’ll already know this, but for those who are new, welcome to Far From The Farm. I’m Mona, the Brit behind the recipes, learning life and food in the States while sharing our debt-free journey and what’s on the menu in our home today!

Back home in Britain, ‘chicken pie’ usually refers solely to a pastry lid and plenty of gravy. Here in the U.S. I’ve discovered there are dozens of different ways to recreate those same comforting flavours. Biscuits, puff pastry, mashed potatoes, crescent rolls, and of course one of my favourite discoveries, crispy golden tater tots. Or croquette potatoes, if you’re reading this from the UK.

I won’t pretend this is restaurant food because it isn’t trying to be. But it is very definately the sort of dinner that quietly gets everyone fed after a busy day.

Creamy, comforting, packed with chicken and vegetables, topped with crispy potatoes and melted cheese. Every single time I’ve made it, the casserole dish has been scraped clean by the end of dinner, and that’s usually all the review I need.

Lately I’ve become far more dependent on pantry and freezer staples than I ever imagined I would be. Having cooked chicken already waiting in the freezer, a couple of cans in the pantry, frozen vegetables, or a bag of tater tots means dinner doesn’t fall apart just because I’m tired or life has become unexpectedly busy.

If you aren’t already meal prepping cooked chicken, I can’t recommend it enough. I always keep freezer bags of shredded Instant Pot chicken ready to go because they save me so much time on evenings like this. I’ll link that method below.

If that’s not where you’re at right now, canned chicken or a rotisserie chicken from the grocery store works beautifully too. No judgement here. Feeding your family is what matters.

As a military family working through Baby Step 2 of our debt-free journey, we’re making more meals at home these days because every dollar we can stretch a little further helps us move toward our goals.

Recipes like this are exactly why I love cooking. They’re practical, filling, family friendly, and built around ingredients that don’t usually cost a fortune. That doesn’t mean anyone feels like they’re missing out.

A bubbling casserole coming out of the oven still feels like comfort. It still gathers everyone around the table. It still fills hungry bellies without requiring an afternoon in the kitchen or an expensive grocery haul beforehand.

And just a reminder that if you’re struggling and you need help with managing your budget or starting your own debt free journey then here’s some FREE resources below you may find helpful!

How to Make Easy Pantry Chicken Pot Pie Tater Tot Casserole

Step 1. Make the Creamy Chicken Pot Pie Filling

Place the cream of chicken soup, drained mixed vegetables, frozen diced onion, minced garlic, salt, and pepper into a large saucepan or Dutch oven.

Step 2. Stir Together the Milk Mixture

Whisk together the water and nonfat dry milk powder, then pour it into the pot. Stir everything together until the ingredients are completely combined and the mixture forms a smooth, creamy sauce.

In a measuring jug, whisk together the water and nonfat dry milk powder until completely dissolved.

Pour it into the saucepan with the soup mixture.

If you’re using regular milk or an unsweetened plant milk instead, simply pour that straight into the pan and leave out the milk powder. Stir everything together.

Step 3. Heat the Filling

Place the pan over medium heat.

Cook for 5 to 10 minutes, stirring occasionally, until everything is warmed through and the filling is hot and creamy.

Add the cooked shredded chicken to the pot. Heat the mixture over medium heat, stirring constantly, until the filling is warmed through and the chicken is fully coated in the creamy sauce.

Once heated, stir in the cooked shredded chicken until evenly combined.

You aren’t trying to reduce the mixture here, just bring everything together into a rich, creamy filling.

Step 4. Prepare the Baking Dish

Preheat your oven to 400°F.

Lightly spray a 9 x 13-inch casserole dish if desired.

Carefully spoon the hot chicken mixture into the dish and spread it into an even layer.

Lightly grease a 9×13-inch baking dish with cooking spray if you’d like, then pour the warm chicken filling into the dish. Use a spatula to spread the mixture evenly into a single layer across the bottom.

Step 5. Add the Tater Tots

Arrange the frozen tater tots over the top of the filling.

You can line them up neatly if you enjoy a more uniform look (my husband loves that so this is how I prepare it for our family), or simply spread them over the casserole like a mad chaos kitchen fairy.

Arrange the frozen tater tots over the chicken filling in any pattern or design you like. Packing them tightly gives you a wonderfully crispy chicken pot pie substitute pie crust shortcut that covers every single bite!

Both methods work perfectly!

Step 6. Bake

Bake uncovered for 45 minutes.

During this time the filling becomes bubbly while the tater tots turn beautifully crisp and golden.

Step 7. Add the Cheese

Bake the casserole at 400°F (200°C) for 45 minutes until hot and bubbling. Pull it out of the oven, top with the shredded cheddar cheese, and pop it back in under the broiler for about 5 minutes until the cheese is completely melted, golden brown, and crisp.

Remove the casserole from the oven.

Sprinkle 1 to 2 cups shredded cheddar cheese evenly over the top.

Place the casserole under the broiler for about 5 minutes, watching carefully, until the cheese is melted, bubbling, and lightly browned.

Step 8. Rest Before Serving

Let the casserole cool for a few minutes before slicing into it. As you scoop it out, you will see that perfect contrast between the crispy tater tot topping and the hot, gooey, delicious chicken pot pie filling underneath!

Remove the casserole from the oven and allow it to rest for 5 minutes before serving.

The filling will be extremely hot and resting gives it time to settle slightly, making it much easier to scoop.

Notes

Top Tip: You can turn this into a true one-pot chicken casserole by making the filling in a large Dutch oven. Once the filling is hot, simply top it with the frozen tater tots and bake the whole dish in the same pot.

  • Drain the canned mixed vegetables well before adding them to the filling. Extra liquid can make the casserole thinner than intended.
  • Frozen tater tots should go straight from the freezer onto the casserole. There’s no need to thaw them first.
  • I usually use about 1 cup of cheddar cheese, but if your family loves a cheesier topping, go ahead and use 2 cups.
  • This recipe is perfect for using leftover cooked chicken, rotisserie chicken, or meal-prepped shredded chicken from the freezer.
  • If you’d like even crispier tater tots, arrange them in a single layer instead of piling them on top of each other.

Troubleshooting

My casserole seems a little runny. What happened?

The canned vegetables may not have been drained well enough, or the casserole may simply need to rest for 5 to 10 minutes after baking. It will continue to thicken as it cools slightly.

My tater tots aren’t crispy enough.

Bake uncovered and finish the casserole under the broiler for 3 to 5 minutes after adding the cheese. Keep a close eye on it so the cheese doesn’t burn.

The filling seems too thick before baking.

Stir in an extra splash of water, milk, or chicken broth until it reaches a creamy consistency.

My cheese browned too quickly.

Wait until the final few minutes of baking before adding the cheese, then broil just until melted and bubbling.

The casserole isn’t hot in the center.

Oven temperatures vary. Continue baking for another 5 to 10 minutes and check that the filling is bubbling around the edges before serving.

UK Ingredient Substitutions & Variations:

A Note for My UK Readers: If you are making this back home in the UK, look for frozen potato croquettes or even a layer of frozen hash browns! They make the perfect substitute for American tater tots and give you that same golden, crispy top.

Storage

  • Refrigerating: Allow the casserole to cool before covering or transferring leftovers to an airtight container. Store in the refrigerator for up to 4 days.
  • Reheating: Reheat individual portions in the microwave until piping hot throughout. Or for larger portions, cover the casserole with foil and warm in a 350°F oven for about 20 to 25 minutes, or until heated through.
  • Freezing: You can freeze this casserole either before or after baking. Wrap the casserole dish tightly with plastic wrap followed by foil, or transfer portions to freezer-safe containers. Freeze for up to 3 months.
  • Thawing: Defrost overnight in the refrigerator before baking or reheating. Cook until the center is piping hot before serving.

Serving Ideas

If I’m serving 2 to 4 people, I rarely bother making a side because this casserole is already a complete meal with chicken, vegetables, potatoes, and cheese.

If I’m stretching it a little further for extra people, a simple side helps fill everyone up without adding much extra cost.

Some of our favorites include:

This also makes a lovely meal to drop off for someone who’s just had a baby, is recovering from illness, or simply needs dinner taken care of!

FAQs

Can you really make chicken pot pie without a traditional pie crust?

Yes! You can easily skip the pastry crust by topping your creamy chicken filling with crispy tater tots, canned biscuits, crescent rolls, or mashed potatoes instead.

What is a good substitute for pie crust in chicken pot pie?

Frozen tater tots are the ultimate pie crust substitute because they create a crispy, golden top layer that perfectly holds the creamy sauce without getting soggy.

Can I use rotisserie or canned chicken instead of cooking my own?

Absolutely. This recipe is perfect for using whatever cooked chicken you already have on hand. Rotisserie chicken works brilliantly, and canned chicken is a great pantry shortcut too. You’ll need about 2 cups of cooked shredded chicken, or approximately two 12.5 oz cans of canned chicken, drained well.

Can I make this casserole ahead of time?

You can mix the chicken filling and spread it into your baking dish up to 24 hours in advance. Keep it covered in the fridge, then add the frozen tater tots right before baking so they stay perfectly crunchy.

Can I use fresh or frozen vegetables instead of canned?

Yes. Frozen mixed vegetables can be added straight to the filling. If using fresh vegetables, cook them until they’re tender before adding them to the sauce so they finish cooking at the same time as the casserole.

Can I freeze this casserole?

Yes. This casserole freezes well both before and after baking. Wrap it well and freeze for up to 3 months. Thaw overnight in the refrigerator before baking or reheating until piping hot throughout.
