My Bread Machine
I use the Cuisinart Compact Bread Machine — it’s the smaller 2lb capacity model, which is perfect for a family of 3-4. It doesn’t take up much counter space, it’s quiet, and it handles everything from a basic white loaf to enriched brioche dough beautifully. I’ve had mine for about a year now and it has never let me down.
If you own a different brand, don’t worry — the vast majority of my recipes will work in any bread machine. I note where something is particularly specific to the Cuisinart settings.

Before you dive into recipes, a few things that made a real difference in my kitchen:
Bloom your yeast first: yes, even in a bread machine.
Most machine manuals tell you to add the yeast last, on top of the flour, away from the liquid. I do it differently, and I want to be upfront: this goes against standard bread machine instructions, so do this at your own risk.
That said, here’s my reasoning. I add my warm water, honey and yeast together at the start, give it a stir, and let it sit for 5 to 10 minutes until it goes frothy and bubbly like the image below:

If it doesn’t bloom, I know immediately and I throw it out before I’ve wasted all my flour. Finding out your yeast is dead after a three hour bake cycle is not a fun experience, trust me.
Every recipe on this site uses this method and it works consistently for me, but if you prefer to follow your machine’s manual and add yeast last, that’s completely valid too.
Measure carefully.
Bread is science as much as cooking. A rough handful of flour is fine for a stew but not for bread. Level off your measuring cups properly and your results will be consistent every time.
Add the salt last, buried in the flour.
Once your yeast has bloomed and you’ve added your oil and flour, make a small well in the top of the flour and tuck the salt in there. This stops it coming into direct contact with your active yeast mixture before the machine starts mixing.
The dough cycle is your secret weapon.
If you’ve only ever used the basic loaf setting you’re missing the best bit. The dough cycle handles all the kneading and the first rise, then you shape and bake however you like. Rolls, cinnamon rolls, pizza dough, bagels and brioche can use this method!

Frequently Asked Questions
Yes, in almost every case. The core recipes: flour, yeast, liquid, fat, salt, all work the same across brands.
The main thing to check is your machine’s capacity.
Most of my loaf recipes are written for a 2lb machine. If yours is 1.5lb, reduce quantities by about 25%.
Most of my recipes use bread flour, which has a higher protein content and gives you a better rise and chewier texture.
All-purpose flour will often work in a pinch but the loaf may be slightly denser. I always note in the recipe which flour I used and tested with.
The most common causes are too much liquid, old yeast, or too much yeast causing the dough to over-rise and then collapse. Check that your yeast is in date and that you’re measuring carefully.
Some machines have a delay timer. I’d avoid using it for recipes with eggs, milk, or butter at room temperature for long periods as these can go off. Stick to basic loaves with water rather than milk for overnight baking.
The dough cycle kneads your dough and completes the first rise, then stops, it doesn’t bake.
You then take the dough out, shape it into rolls, pizza, cinnamon rolls, whatever you like, and bake it in the oven.
It gives you all the convenience of the machine for the hard part (kneading) while letting you control the final shape and bake yourself.
