One of the things I miss most about British takeaway food is a proper kebab night.
I mean the kind of takeaway meal where you get soft bread, shaved meat piled high, salad shoved in there somewhere, a little chilli sauce, and a pot of garlic mayo on the side that somehow makes the whole thing taste exactly right.
British takeaway food has its own little culture around kebabs, gyros, doner meat, chilli sauce, garlic mayo, mint sauce, chips, and late-night food that tastes far better than it probably has any right to.
And since moving to the States, Iโve noticed things are often served, well, a bit differently here.
You can absolutely find gyros here, of course, but theyโre often served with tzatziki or a more Greek-style sauce. Delicious, yes. But not quite the same thing as the garlic mayo youโd get with a cheeky kebab from a British takeaway.
Back home, if youโre grabbing a kebab, youโll usually be asked if you want garlic mayo, chilli sauce, or both (the correct answer is usually both).
But garlic mayo is the one I really missed.

I just have not been able to find the same type of garlic mayonnaise sauce readily available where we are in the States.
There are garlic aiolis, ranch-style sauces, creamy garlic dressings, and all sorts of lovely things, but none of them hit the same as that simple British takeaway garlic mayo you get in a little pot on the side of your dish, or slathered inside a delicious wrap.
So for our homemade fakeaway nights, I started making my own. And it’s not complicated. At all.
It is one of those recipes that almost feels too simple to write down, but once you have the ratios right it becomes the kind of thing youโll keep making again and again.
Use minced garlic (or fresh if you’re feeling bougie), not just garlic powder.
Garlic powder has its place. I use it all the time. But for this sauce, minced garlic gives a fresher, more fragrant flavor that feels much closer to the takeaway version I remember.
It makes the sauce taste like garlic mayo rather than plain mayo with a bit of garlic seasoning stirred through it.
A little lemon juice helps loosen everything up and gives the sauce a slightly thinner, more dressing-like consistency. You do not need fresh lemon for this. Bottled lemon juice is completely fine here, which is exactly the sort of practical kitchen shortcut I appreciate on a busy dinner night.
Then all you need is salt and pepper to taste.
No jokes about bland British food stereotypes, thank you very much!
You can absolutely make your own mayonnaise if you want to go the extra mile, but I rarely bother for this. Store-bought mayo works beautifully, and you can use full-fat mayonnaise or light mayonnaise depending on what you prefer.
Light mayo is a really easy way to cut down on calories without losing the whole point of the sauce.
It still tastes creamy, garlicky, and perfect for kebabs.
The only thing I really recommend is letting the sauce sit in the fridge before serving. You can technically serve it straight away, but it is much better after at least 4 hours in the refrigerator. And it’s pretty phenomenal the next day if I do say so myself!
That resting time lets the garlic soften into the mayo and gives the flavors a chance to settle properly.
If youโve ever looked behind the counter in a British kebab shop, youโll know those sauces are not being mixed up one tiny ramekin at a time. Youโll see tubs and buckets of garlic mayo sitting in the fridge ready for the evening rush.
So yes, make it ahead. It tastes better that way.
It also makes homemade fakeaway night feel much easier because your sauce is already waiting in the fridge when the kebab meat, gyros, flatbreads, chips, or salad are ready.

Ingredients

Makes about 1 cup garlic mayo sauce
- 1 cup mayonnaise or light mayonnaise
- 2 tbsp minced garlic
- 1 tsp lemon juice
- 1 tsp salt
- 1/2 tsp black pepper
Step-by-Step Instructions
Step 1
Add the mayonnaise, minced garlic, lemon juice, salt, and black pepper to a bowl.
You can use full-fat mayo or light mayo here. Both work well.
Light mayo is a good option if you want to cut down on calories while still getting that creamy takeaway-style garlic mayo flavor.

Step 2
Mix everything thoroughly with a spoon until the sauce is completely combined.
Make sure the garlic is evenly distributed through the mayo so you do not end up with one very aggressive garlic pocket later.
Step 3
Taste and adjust if needed. If you want a slightly sharper sauce, add a tiny splash more lemon juice. If you want it saltier, add a pinch more salt.
If you want it more garlicky, you can add a little more minced garlic, but remember the garlic flavor gets stronger as it sits in the fridge.
Step 4
Make sure to cover the bowl tightly with plastic wrap.
Garlic mayo will absolutely make your fridge smell like garlic if you leave it uncovered or loosely covered.
Step 5
Refrigerate for at least 4 hours before serving.
You can serve it straight away if you really need to, but the flavor is much better after resting.
The garlic softens into the mayo and the whole sauce tastes more like the takeaway-style garlic mayo you are aiming for.

Step 6
For easier serving, transfer the chilled garlic mayo into little condiment pots with lids.
This is especially handy for fakeaway nights, packed lunches, dipping sauces, or serving with homemade kebabs and flatbreads.
Step 7
Keep leftover garlic mayo stored in covered condiment pots inside an airtight container.
This helps stop the garlic smell spreading through the fridge. A small pot with a lid is good. A small pot with a lid inside a larger lidded container is even better.
Step 8
Serve with homemade kebabs, gyros, Turkish flatbreads, chips, fries, burgers, wraps, grilled chicken, salad bowls, or anything else that needs a creamy garlic sauce.

Add a little more salt, pepper, or minced garlic. Add extra garlic carefully because the flavor becomes stronger as it rests.

Stir in a little more mayonnaise until it reaches the consistency you like.
My fridge smells like garlic

Yes. In the UK we usually say takeaway instead of takeout. So when I say British ‘takeaway’, I mean the kind of food you would order in the UK from a local kebab shop, curry house, Chinese takeaway, chip shop, or pizza place and bring home to eat.
What do Brits mean by a fakeaway?
A fakeaway is a homemade version of takeaway food.
Sometimes people use the word for budget-friendly homemade takeaway-style meals, and sometimes it is linked with lower-calorie versions of favorite takeaway dishes, especially in ‘Slimming World” style cooking, (Slimming World is a popular UK based weight loss organisation similar to Weightwatchers but you don’t count points per se).
For me, it usually means recreating the foods I miss from home without spending a fortune.
Why do Brits sometimes call gyros kebabs?
In the UK, youโll often hear people use the word kebab for foods that might be described more specifically as gyros, doner kebabs, shawarma, or similar dishes elsewhere.
They are not all exactly the same thing, but in everyday British takeaway language, people often group them together more loosely.
Think of it a bit like the way Brits get twitchy when cottage pie gets called shepherdโs pie even though there is no lamb in it.
It is part food, part culture, part naming habit.
Why is garlic mayo served with kebabs?
