Simple From Scratch Shrimp Alfredo Fettuccine Recipe

Ingredients
  

  • 1 & 1/2 sticks butter, divided - 1 stick (8 tbsp for the pasta) and 1/2 stick (4 tbsp) for cooking the shrimp
  • 1 large bag shrimp - we like medium Wild American Raw Peeled Shrimp
  • 2 tbsp cajun seasoning
  • 2 tbsp chipotle hot sauce
  • 2 tbsp minced garlic
  • 1 8 oz block cream cheese, softened and cubed
  • 1 pint heavy cream
  • 1 cup shredded parmesan or cheddar cheese - OPTIONAL: makes the sauce much more luxurious, rich and thick
  • salt & pepper to taste - OPTIONAL: use as much or as little as your family prefers

Equipment

  • frying pan large non-stick with high sides preferably
  • Baking Sheet large, high sides
  • Aluminum foil to cover the baking sheet
  • Tablespoon measures
  • sharp knife to cut your cream cheese into cubes
  • Non-stick spatula, whisk or wooden spoon to stir

Method
 

  1. Step 1 – Season the Shrimp
    Drain the defrosted shrimp and keep them in their bag. Add cajun seasoning and chipotle hot sauce. Seal, give it a good shake, and set aside for 30 minutes. This helps the flavor soak in.
  2. Step 2 – Preheat the Oven
    Turn your oven on to 350°F/180°C
  3. Step 3 – Prepare the Baking Sheet
    Line your baking sheet with foil. Spread 1/2 stick of softened butter across the foil to keep shrimp from sticking.
  4. Step 4 – Bake the Shrimp
    Spread the shrimp evenly on the buttered foil. Bake for 15 minutes until just cooked through.
  5. Step 5 – Start the Alfredo Base
    In your high-sided pan, melt 1 stick of butter with the minced garlic on medium heat. Stir constantly so it doesn’t burn.
  6. Step 6 – Add the Cream Cheese
    Drop in your cubed cream cheese and whisk until it starts to look like cottage cheese. Go slow. This step usually takes 5 minutes but it’s worth it for a smooth sauce.
  7. Step 7 – Pour in the Cream
    Once the cream cheese is partially melted, slowly whisk in the heavy cream. Stir until the mixture turns silky.
  8. Step 8 – Add the Cheese
    Toss in the shredded mozzarella or whatever cheese you’re using. Stir until melted and combined.
  9. Step 9 – Season to Taste
    Add salt and pepper. We go heavy on the pepper, but adjust for your family’s taste.
  10. Step 10 – Combine and Serve
    Toss the cooked shrimp into the Alfredo sauce or serve them on top of fettuccine. Both ways are delicious.
  11. Step 11 – Storage
    This dish doesn’t freeze well, but it keeps in the fridge for up to 48 hours in an airtight container. 
    When reheating, add a tablespoon of milk and gently warm on the stove to loosen the sauce.

Extra Tips

  • If you prefer a lighter sauce, swap half the heavy cream for half the amount of whole milk.
  • To cut heat, skip the chipotle hot sauce and double up on mozzarella for a creamier finish.
