A Cozy Breakfast Copycat That Hits the Spot
When I first moved to the US from the UK, McDonald’s surprised me – and the best way!
The menu was familiar in parts, but the breakfast sandwiches were totally new to me.
Back home in England, a “biscuit” is sweet, something you’d serve with tea. Here, biscuits are savory, fluffy, and served as the base of hearty breakfast sandwiches.
One of our family favorites, and hands-down my husband’s number one breakfast pick, is the McDonald’s bacon egg and cheese biscuit. It’s simple, filling, and comforting.
But as much as I enjoy grabbing one from the drive-thru, the cost adds up fast. That’s when I decided to create my own copycat version, using my homemade Old-Fashioned Buttermilk Biscuits with Bacon Grease!

This version has an Appalachian twist thanks to the bacon grease biscuits. They give the sandwich a smoky richness that makes the flavor pop in a way the drive-thru never could.
And the best part is that I can make eight sandwiches at home for the price of one fast food order!
These photos are just the real thing from my iPhone, shot in our little military base kitchen as I cooked for my family this morning. No staged countertops, no perfect lighting. Proof that good food doesn’t require a fancy kitchen!

- 8 slices bacon (any style works)
- 8 slices American cheese
- 8 eggs
- 4 tbsp bacon grease (or any fat/oil you prefer)

Step by Step Instructions
Step 1: Bake your biscuits
Fresh is best. I always use my bacon-grease biscuits, but if you’re short on time, canned buttermilk biscuits will work.
Step 2: Slice biscuits
Once baked, halve the biscuits horizontally so you have a top and bottom ready to assemble. Set aside and keep warm under a kitchen towel as you cook the bacon.
Step 3: Cook your bacon
Lay bacon strips on a foil-lined baking sheet and bake until crisp to your preference. Oven-baked bacon cooks evenly, and it makes saving the grease easy for future recipes.
Step 4: Cook your eggs

Fry eggs in a pan with a little bacon grease for flavor. We love them over easy, but scrambled or fried hard both work fine.
Step 5: Assemble sandwiches
Place an egg on the bottom half of a biscuit, add a slice of cheese while the egg is hot so it melts, then top with a slice of bacon. Finish with the top half of the biscuit.

Step 6: Serve warm
These sandwiches are best eaten right away with a hot coffee or glass of juice.
