If you’ve never tried using your Instant Pot’s slow cooker function, take this as your friendly nudge. It’s such a game changer!
Not only does it keep the counter from being cluttered with extra gadgets, but if you’re using an Instant Pot Pro like I do, you can switch straight from sautéing to slow cooking in the same pan. Total time saver.

Ingredients (Serves 4)
- 2 to 3 lbs country style ribs, trimmed of any excess fat
- 1 ½ cups ketchup
- ½ cup brown sugar
- ½ cup white vinegar
- 1 tbsp garlic salt
- 1 tsp seasoned salt
- 1 tsp liquid smoke
- ½ cup water, divided

Freezer Meal Prep
To make the freezer meal, start by trimming your ribs and placing them into a large freezer-safe food bag.
In a mixing bowl, whisk together the ketchup, brown sugar, vinegar, garlic salt, seasoned salt, liquid smoke, and ¼ cup of the water. Pour this sauce mixture into the bag over the ribs, seal tightly, and gently move it around so everything is coated well.
Flatten the bag slightly so it freezes flat. It’ll thaw faster and take up less space in the freezer.
Make sure to write the recipe name and cooking instructions on the bag before freezing. (Ask me how I know this one!) This freezer meal will last up to 3 months.
Step-by-Step Instructions
Step 1: When you’re ready to cook, remove the freezer bag from the freezer. You can cook these ribs straight from frozen or thaw them overnight in the fridge if you prefer.
If cooking from frozen, run the bag under cool water for a minute or two to loosen it from the sides. This little trick makes it so much easier to get out!
Step 2: Spray your slow cooker with non-stick cooking spray. Empty the contents of the bag (ribs and sauce) into the slow cooker, scraping every bit of that smoky brown sugar mixture out of the bag.

Pour in the remaining ¼ cup of water to help the sauce cook evenly.
Step 3: Place the lid on and cook on LOW for 8–9 hours or until the ribs are completely tender and cooked through.
If using the Instant Pot Pro slow cooker function, set it to HIGH for 10–12 hours, since the Instant Pot’s slow cook setting runs a little cooler than a traditional crockpot.

Step 4: Once the ribs are done, they should be fork-tender and coated in that gorgeous thick sauce. You can serve them as they are, or use tongs to transfer them to a baking sheet and broil for 2–3 minutes to caramelize the top for extra flavor.
That final quick broil makes them taste like proper barbecue, sticky, smoky, and sweet!

Step 5: Serve hot with your favorite easy sides. We love pairing these with mashed potatoes and green beans when we’re on a tight schedule, or coleslaw and cornbread when there’s a little extra time.
