Method
- Add the cream cheese, shredded chicken, shredded cheese, and chipotle hot sauce to a 1.5 quart slow cooker.
- In a small jug, mix the ranch seasoning with the milk, then pour it into the slow cooker.
- Use a spoon to break up the cream cheese slightly and give everything a rough mix. It will be very thick at this stage.
- Cover with the lid and cook on LOW for 3 to 4 hours or HIGH for 2 hours.
- Stir every 30 to 45 minutes, breaking up the cream cheese as it softens, until the dip becomes smooth and fully combined.
- Once hot and creamy, serve straight from the slow cooker with chips, crackers, or vegetables.
Notes
- Chipotle hot sauce adds smokiness as well as heat
- Use rotisserie chicken for convenience
- Mexican blend cheese adds extra flavor depth
Storage
- Store leftovers in an airtight container in the fridge for up to 3 days
- Reheat gently in the microwave or slow cooker, adding a splash of milk if needed
