Ingredients
  

For the dough
  • 2 1/4 cups warm water - about 100 to 110°F
  • 4 tbsp white granulated sugar
  • 5 tsp active dry yeast
  • 6 cups bread flour
  • 2 tbsp dried minced onion
  • 3 tsp salt
For boiling the bagels
  • 3 tbsp honey - or substitute white or brown sugar
Egg wash for a golden finish
  • 1 egg, beaten
  • 1 tbsp water
Toppings
  • Sesame seeds or everything bagel seasoning - as much or as little as you prefer

  • KitchenAid stand mixer with dough hook or other similar mixer with dough hook attachment
  • Measuring jugs, cups and spoons
  • Plastic Wrap or clean damp kitchen towel
  • Bench scraper or knife
  • Parchment paper

Method
 

  1. Add the warm water, sugar, and yeast to the bowl of your stand mixer.
    Stir gently, cover, and leave for 5 minutes until foamy. If it does not foam, start again with fresh yeast.

  2. Add the bread flour, dried minced onion, and salt. Attach the dough hook and knead on low speed for about 5 minutes until the dough comes together.

  3. Turn the dough out onto the counter and knead by hand for 2 minutes until smooth and elastic.
  4. Shape the dough into a ball, place it back into the bowl, cover with plastic wrap or a damp towel, and let it rise for 1 hour.
  5. Punch down the dough and divide it into 12 equal pieces. Shape each piece into a bagel, making the hole slightly larger than you want it in the end.

  7. Bring a large pot of water to a boil and add the honey. Preheat the oven to 375°F.
