Method
- Preheat your oven to 350°F.Line a baking sheet with parchment paper. Arrange the pretzels in a single layer with a little space between them so the chocolate and nuts have room to settle.
- Place one unwrapped Rolo in the centre of each pretzel.Make sure they are standing upright and not leaning over the edge so they melt evenly.
- Place the tray in the oven for 1 to 2 minutes only.You want the Rolos just softened enough to press a pecan into, not melted into flat puddles. Keep an eye on them because they soften quickly.
- Remove the tray from the oven and work fairly quickly.Gently press one praline pecan half onto the top of each softened Rolo. The caramel and chocolate will squish slightly and hug the pretzel which is exactly what you want.
- Allow the bites to cool on the tray until they firm up enough to lift without sliding around.You can pop the tray into the fridge for 10 to 15 minutes if you want them to set faster or prefer a slightly firmer texture.Once fully set, enjoy straight away or transfer to an airtight container ready for gifting, snacking or adding to your holiday treat plates!
Notes
- Do not over bake. Rolos melt incredibly fast and become runny.
- Store in an airtight container at room temperature for up to 4 days.
- These freeze well for up to a month although the pecans soften slightly once thawed.
- Microwave one for five seconds if you want a warm gooey centre.

- Store the cooled bites in an airtight container at room temperature for up to 4 days.
- For slightly firmer bites, keep them in the fridge for up to a week and bring to room temperature before serving if you prefer a softer centre.
- These freeze well for up to 1 month. The praline pecans soften a little once thawed, but the flavour is still lovely.
