Method
- Preheat your Traeger or other pellet grill to 250°F.
- Place the butter in a large disposable roasting pan and set it directly on the grill grate. Allow it to melt completely, about 5 to 10 minutes.
- In a small bowl, combine the Worcestershire sauce, chipotle sauce, seasoned salt, garlic powder, and onion powder. Stir until smooth and well blended.
- Pour the spice mixture into the melted butter and stir it together until fully incorporated.
- Add all your dry ingredients; the Chex cereals, mixed nuts, peanuts, and pretzels, into a bowl and then pour that into the roasting dish with the butter and spices. Stir gently until everything is evenly coated with the buttery sauce.
- Step 6: Close the Traeger lid and smoke for about 1 hour, stirring every 15 minutes to make sure all the pieces toast evenly. The mix should be crisp, fragrant, and lightly golden when done.
- After 1 hour stir the mix again and reduce the temperature to 140°F and close the lid for another 20 minutes. This step adds extra smokiness to the flavor without burning the cereal.
- Remove the pan carefully (it’ll be hot!) and spread the mix out onto parchment paper or a large baking sheet to cool. It will crisp up even more as it cools.
- Store in an airtight container once cooled.
Notes
- Adjust the spice level by adding more or less chipotle sauce.
- Try adding bagel chips or goldfish crackers for a fun variation.
- Don’t skip stirring every 15 minutes. It’s what keeps the mix crunchy and evenly coated.
- Make this a little more budget-friendly by skipping the mixed nuts. Either leave them out completely or replace them with more of the frugal peanut options.
Storage
- Store cooled mix in airtight containers or gallon-sized bags at room temperature for up to 2 weeks.
- It also freezes well. Just thaw uncovered so it stays crisp.
